Overnight

While I slept like a rock, these were workin’ hard in the fridge!

Pumpkin Chia Overnight Oats

The Mix:

ALL RAW. No cooking. Ever.

  • 1/3 cup oats
  • 1/2 cup vanilla soy milk
  • 1/3 cup TJ’s Euro Yogurt (you can use regular yogurt or greek – the thickness is negligible)
  • 1/2 cup pumpkin
  • 1/2 tbsp chia seeds
  • 1/2 tbsp ground walnuts from loaf recipe
  • Cinnamon
  • Pinch salt

***SIT OVERNIGHT IN FRIDGE***

Toppings

  • Naturally Nutty PB Sauce
  • Melted, warm Crofter’s North America Spread

For the PB sauce, take about 1 tbsp of pb and add some milk. Just a little. Like a tbsp. Put in microwave for 10 seconds. Stir and stir. If you think there is too much liquid, sip off a little.

You want it to thicken into a sticky paste.

Then add 1 more tsp of milk and stir until it gets creamy.

Plop on!

They had their fancy dinner in a wine cellar last night. So sad I missed it. Also sad I’m missing out on all the Great Harvest networking!

    I guess technically it’s Pumpkin Chia Peanut Butter & Jelly Overnight Oats – a bit of a mouthful, but it sounds like a great combination! 😉

    I love prepping my oats the night before. Only, I have a thing that I must eat them warm in the cold winter months, so I usually end up popping them in the microwave for a little. I thought it would be weird with the yogurt, but it actually works. You should try this sometime.

    I have to try overnight oats. They always look so good, I think I am going to have to wait until it’s warmer though….cold oats don’t sound as appealing when it’s only 25 degrees out.

    Hi Kath,

    Looks like Matt is at Castello di Amerosa in Calastoga. It’s one of my favorites, and I just ordered six bottles of wine from them last week!

    I’m also wearing a pair of pants today that haven’t fit for a while. I’ve been training for a half for 4 weeks, and I think it’s finally starting to pay off. While I haven’t lost any pounds, I must be building muscle and losing inches. It’s funny to read about your training runs. I am a SLOW runner. 10 miles takes you 1.5 hours, but I’d be our running for over 2 hours to get the same distance! Oh well!

    I love the feeling of trying on that piece of clothing you’ve been holding on to for a while and having it FIT! It’s just magical, lol 🙂 I actually had a dress hanging on my bedroom door in college to give me inspiration to go to the gym…..and I finally tried it on a few months ago and was *this close* to zipping it all the way up. victory WILL be mine one day (hopefully soon!) 😉

    Kath!! Those overnight oats look sooooo GOOD. I love that you use pumpkin even when it’s not really “in season”. I absolutely love all things pumpkin but usually only think of eating it around the fall time, but I think you’ve just broken me out of my shell 😉

    I’ve made the breakfast cookie, but never the overnight oats – maybe I’ll have to try them this week! If you don’t add the pumpkin, would you change the amount of liquids?

      No, liquids should stay the same. But without chia seeds, add a little less. Equal parts oats, milk, yogurt.

        smaller portions, less indulgences on desserts, etc. Seems like you have been making a conscious effort to eat less or maybe you are just being more intuitive with your eating and therefore eating less, etc.

      I’ve never tried it. They take much longer to cook so I’m guessing they might be chewier and absorb less liquid. But I think it’s been done.

    I just have to say I have been reading these pumpkin oat recipes ALL winter with such envy… apparently there was a bad pumpkin crop last year and canned pumpkin is NOwhere to be found in Colorado where I live!
