One Great Run, One Great Lunch

The first spring in a new house is always fun – you never know what is going to pop up where!

I worked while Matt had tons of appointments this morning. I can tell the bakery to-do list is growing exponentially! [I just realized when I spelled it wrong that I say that word “Expo-den-tially” D’oh!]

But I waited for him to get home so we could run together. We often have business meetings on runs! It makes for a good time to catch up on details, but it also means we’re out of breath much faster. I nearly died on a hill today and had to stop and walk I was so out of breath. But then I realized it was because not only were were talking a lot, but we were also running fast. WITH the walking we still managed to keep that mile at 8:59. We did 4 miles in 35 minutes – not bad for this out-of-shaper!

For lunch I just HAD to repeat that killer burger from earlier this week. These Mole burgers were supposed to be a slight fail but I will now be making them again! With the avocado and coconut and the almost-gooey texture, this is the best burger I have ever had. It would even work for breakfast if you could stomach the thought of refried black beans in there!

    Awesome run – I find it sooo hard to talk and run, it does make you tired 10 x faster! Maybe that or I’m just way out of practice – I’m a Lone Runner …

    I love sweet potato chips! They are sinfully delicious 🙂 Glad you had a good run! Last week I ran that same mileage in 35 minutes too, except I was speed training, haha 😀 Maybe if I keep it up, I can run that fast without trying that hard!

    The fact that it’s the best burger you’ve EVER had??! THAT is a big sentence. I need to make them if that’s the case!

    The cleaning post, a Misto. Also that you’ll never go back to cooking spray makes me wanna pick up a Misto. I will use a handy BB&Beyond 20% off coupon (they never expire so I save my stash from the mail when they send them) and pick one up!

    I am SO impressed that y’all can have “business meetings” while out on a run. I’m always that girl with a pad of paper and pen in hands, taking notes on everything! I’d have to bring along some form of portable notebook for the meeting to be even close to effective for me 🙂

    How creative of you to put avocado and coconut in a sandwich! Must try that- I never use coconut in savory way, other than coconut milk, so i’m sure this combo tastes awesome! Enjoy your day 🙂

    What a delicious lunch! I love avocado in a sandwich! Avocado makes everything taste amazing. 🙂 I really like those Terra Sweet Potato chips! I just tried them for the first time yesterday at my mom’s house and I have been craving them ever since! So good.

      I just buy the sweetened flake kind used for baking in most grocery stores. I don’t use much of it, so I don’t care that it’s sweetened.

    I will need to make those bean burgers! Just curious, what took them from so-so the other day to the best bean burgers you’ve ever had?? Was it pretty much just the avocado and coconut?

      Well they were really hard to make! Actually the first round I did I didn’t add the flour. The second round I did, which is the recipe I posted. So I nearly lost them! I think I might recommend baking them next time since they were so sticky. But once shaped and cooked to form, they tasted amazing.

    LOL at the thought of “stomaching” refried beans for breakfast….when we first arrived in Honduras we could hardly stand it. Now we think of beans as a totally natural partner to eggs..breakfast, lunch or dinner…or all three sometimes if we are staying with locals!
