On My Plate

I’ve got a bit of the post-holiday blahs. I think we need a Christmas tree tomorrow to brighten the mood!

I cleaned up the house and did lots of laundry. Things are all in order!

Matt and I put together a simple leftovers soup for dinner using most of the T-giving staples

Thanksgiving Leftover Turkey Soup

  • 4 cups broth
  • 2 cups turkey bits (both white and dark meat)
  • 2 cups greens (a mix of cooked cabbage and fresh collard greens, torn)
  • 2 cups cooked wild rice
  • 1 tsp Garlic Gold crunchies in oil

Combine all in a stock pot and heat until steamy.

Serves 4ish

On the side: leftover T-giving salad topped with a plum(b) and half an apple plus some p-nuts

I am definitely missing an appetite today. This dinner didn’t taste very good and I probably should have eaten less of it. I think I mostly just ate it all out of boredom!

    A nice fresh looking dinner! Pinenuts are the bomb. Shame about your appetite. It will return tomorrow, no doubt. Festive season is fun but can do that to you – bring on the blahs, that is!

    The only time I’ve ever made soup with leftover turkey, I used wild rice too! The flavours go so well together 🙂

    I already have the Holiday blues heading back to the city tomorrow which means work on Monday 🙁 I am with you on the holiday decorations – Hopefully my roommates and I will decorate on Monday night! Plus I will listen to christmas music at work – that should help!

    This is a great leftover recipe. It’s so fun to see what people do with the leftovers… aside from just heating them up. It’s so possible to turn them into something new and interesting.

    I’m trying to ward off the blahs by enjoying my last night home with the family before I head back to school. All that waits there are looming assignments and finals! I think some Christmas decorations and tunes are just the thing to switch up the mood 🙂

    I swear it doesn’t feel like Saturday… more like Sunday, but hey! One more day to enjoy! I love that nail polish by the way. It reminds me a lot of winter.

    Thanksgiving leftovers soup is a pretty interesting idea! Pity about your appetite- I have been feeling the same lately. I’m traveling at the moment so I need to eat to keep my energy levels up, but it’s so hard! What gives?! Blah!

    Post-holiday blues just hit me this morning. Oh, wait, I think the thing that hit me is that today is my last day before going back to work. Eww!

    I made a turkey and wild rice soup with our leftovers too, plus loads of veggies. it was awesome!
