Off Kilter

I’m feeling kind of weird today, likely because I didn’t have a normal breakfast, was gone from home for the morning hours and have no fruit in our house!!

This lunch looks so simply without a side dish!

At 1 O’clock I whipped up some wild Alaskan salmon salad (from a can of TJ’s brand – no bones or skin) served with corn chips and wheat crackers.

Ingredients

  • 1 can wild salmon
  • 2 tsp mayo
  • 1 tbsp mustard
  • 2 tbsp greek yogurt
  • 1 tbsp capers
  • 1 chopped carrot
  • 1 chopped garden pepper of unknown species

Consumed: 2/3 of the portion – saving the last 1/3 for a salmon melt tomorrow or Friday!

    I also have to have fruit daily! I’m not even sure how weird I’d feel without some since it’s been forever since I’ve gone a day without!

    oh, a salmon melt sounds just so much more appealing than a tuna melt! is the canned salmon a lot more expensive than the tuna?

    Just wondering, Kath. If you were out at the doctor’s office yesterday, at the bank today, and at Great Harvest, why could you not have stopped by a store and picked up some fruit? I am constantly making lists and never let my house get low on fruit or vegetables. If I’m out of bananas I start to feel anxious! I’m so weird like that!

      I could have! But bank and GH were not near store (and I was walking) and doctor’s was not on the way…. and fruit is the only thing I’m out of. I’ve been planning a trip for tomorrow, so just holding out until then. I actually have one banana left, but didn’t want it for lunch and missed breakfast!

        I felt crampy around a week or two before I went into labor. They felt like menstrual cramps that circled around to my back. (I should have seen the back labor coming, ha ha 🙂 )

        Oddly enough the only pains I had the day my water broke was a terrible toothache!! And I had NO progress… makes me very curious as to when it will be your time. Are you getting nervous at all?

    Mmm sounds tasty! And easy. Always a plus. 🙂 Love your ongoing addition to blue tortilla chips to each meal. I actually wrote a blog post about them today—if I could stop at just one serving, I’d eat them allll the time!

    whenever i do anything out of my normal routine, i usually feel a little weird, too! granted….ive never carried another human being in my body, so i would think that would probably make a bit of a bigger difference 🙂

    YUM! Sometimes when I have leftover salmon from dinner I used it to make salmon salad the next day. Even better than tuna!

    Capers! Why don’t I ever think to use capers??? Your lunch looks so satisfying and takes a great photo.

    I hate getting low on fruits and veggies too. The kitchen just doesn’t feel right without ’em.
