No She Di’ENT!

Life feels so different now.

I’ve spent the past 9 months doing mostly desk work related to blogging and getting the business started. Now I’m doing most of my work outside of the house, and most if it is not related to the internet! I’ve had to put some of my blogging duties to the side for a while (freelance work, more time-intensive recipe posts) but they will be back when we are over the hump of opening.

It’s going to be a tight squeeze to get everything together in the next 7 days, but we’re still hoping for a June 3 opening!

Overnight oats – 100% delicious.

My bowl was filled last night with a combo of:

  • 1/3 cup dry rolled oats
  • 1/2 cup greek yogurt (I’ve been eating Whole Foods low-fat organic regular yogurt for a while because it’s less expensive but just picked up some greek – MAN I forgot how good it is!!)
  • 1/2 cup milk
  • 1/2 banana
  • 1 tbsp chia seeds
  • Pinch salt
  • Sprinkle cinnamon

**In the fridge while I dreamed of sugarplums**

This morning’s toppings:

  • Hemp plus granola
  • Honey Crunch PB

No She Di’ENT!

Hot coffeeeeee! Stolen from Matt’s pot. It’s been really cold this week so my taste for coffee is back. I think after a month off it’s safe to say I’m un-addicted to caffeine, so I’m adding it back just in small amounts a few days a week. I do love coffee, so I wouldn’t want to live life totally without it!

    This morning was my first morning making your banana whipped oats for breakfast and I have a question. When do you add the chai seeds? At the end or while cooking? Thanks much! And thanks for introducing me to new kinds of breakfast food.

      I add them in the beginning! The only things I stir in the end are cottage cheese, pumpkin and vanilla 🙂

    The title made me laugh out loud and allllmost snort MY coffee out of my nose. Ouch!
    The oats look delicious as usual. Wishing I had made overnight oats last night for breakfast. However, it’s chilly here this morning, so I opted for hot brown rice farina cereal.

    Wow, opening in less than a month!! Should be exciting! I’m not a coffee drinker, but I do love Diet Pepsi. I gave it up at the beginning of this year, and have maybe one a week. It is nice to have something like that once in a while.

    I did the same thing with yogurt. All winter when I ate it, I stuck with plain Stonyfield Yogurt, or a local, organic yogurt that is delicious [Hawthorne Valley Farm] that’s often cheaper.

    For some reason though, when the weather warms up, and I can find it on sale, I buy Greek yogurt. There’s something really satisfying about the tang in the warmer weather. Delicious!

    Yummy breakfast!! I love how creamy Greek yogurt is too, especially after I haven’t had it in a while! I think there’s nothing wrong with small amounts of coffee – glad you enjoyed your morning cup! 🙂

      Haha yeah, I don’t think my belly is that big…and I sure have been drinking beer + wine for 9 mos! But I actually also noted in my head when I typed 9 months – “Hey, that’s how long it takes to grow a human!”

    So, one of my friends and I had an “oatmeal night” a couple of days ago, during which I made her your banana whipped oats topped with peanut butter and a tsp of crofter’s. She’s in love. Just thought you should know you gave us the means for a fun, delicious night 🙂

    For the record, I think you’ve done an AMAZING job keeping up the blog with everything else going on in your life right now. I don’t understand how you still manage three posts every single day. I’m new to the blogging world, and I’m afraid my posting is still somewhat inconsistent. However, in a little over a week I’m transitioning to working from home full time, which I hope will give me the flexibility to step up the blogging a notch!

    Overnight oats has got to be one of the best things since sliced bread 🙂 I almost tried to give up coffee too, but then I realized how much I really love it and the experience of it (is that too much, lol) so know I just try and not go overboard, but I really never want to have to give it up unless it is for health reasons.

    Addiction to caffeine is a funny thing. Sometimes I can’t function without it, sometimes I don’t miss it. It’s totally impossible to cut it out completely, if you ask me, so your approach to coffee is good enough! Drink it when you really want it!

    Question for you about getting ready to open your Great Harvest Bread Co.:

    Do you work for three weeks training your employees on how to make/bake bread, create certain recipes, and stocking shelves, etc. (I believe you said the owners come and work with you for the three weeks prior to your actual opening date)?

    What will you do with all of the practice loaves of bread that you will be making prior to opening your door to the public?

    The bakery looks amazing. This has been really interesting to go through this journey with you and I am wishing you all the very best.

      There’s really more like 1 big week of bread baking training, and I honestly don’t know how much bread we will produce. We will be giving out 40-50 gift baskets of bread to the community, so I’m guessing that’s where most of it goes. And we feed the employees sandwiches!

    O.K. I have to say it. I don’t like this bowl at all! 🙂
    Everytime I see it, my first thought is an athletic cup for males. Maybe it’s from living with 3 males and having grown up with another 3.

    The food always looks good. Just not in that bowl. Love your site Kath.

    I can’t wait until I go home and try out overnight oats…every time a blogger posts it, I get all hungry even though I just ate breakfast. Sometimes my usual breakfast of oatmeal, eggs and fruit can get a little blah. 🙁

    If there is any leftover bread that is just going to be thrown out please consider giving it to the local homeless shelter! The bakery next to my work does it, everynight someone comes in to collect anything that can’t be sold the next day. A great way to give back to the community, and if it was going in the bin/compost anyways then its not a loss, its a ‘warm fuzzies’ gain!

    I don’t like how the world seems to be divided into coffee junkies and coffee haters. Can’t we have just normal coffee drinkers who have it maybe 4 times a week?
