Hit The Road, Kath

And dontcha come back without bread, without bread, without bread, without bread!

My body was nice and pumped this morning. Body Pump was good as usual. Every week a different body part almost falls off. Last week it was biceps. This week it was chest!!

After class, I met new friend + KERF reader Jenn for a walk with her darling little 5 mo old, Levi. We did a nice loop around downtown Cville. Always, always fun to make new friends! I feel like I have so many friends here in Cville it’s hard to keep count! We need to have another party and invite everyone soon.

Jenn gave me a coconut water to sip before our walk! It was perfect because I was thirsty AND hungry from my workout and it helped tide me over to lunch.

I biked back home and nothing sounded more delicious than a smoothie!

I made a smoothie out of the following:

  • ~1 cup frozen berries
  • 1/2 cup frozen banana slices
  • 1 cup milk
  • 1 tbsp Vega Choc-a-lot (just opened this new back – I love the flavor and texture it gives to smoothies!)
  • 1 big handful baby spinach
  • 1/2 cup water (had to add this because the smoothie was so icy it wouldn’t blend!)
  • Topped with….Danielle’s Honey Banana Chips!! YUM!! These are so crunchy!

On the side, I microwaved a frozen Whole Foods brand corn tortilla from my freezer (for days when we have no bread) and spread on some Lavender Pea Hummus (I think I made this recipe on Monday?) and leftover roasted tofu.

I was able to pinch it together into a taco!

Just took a quick shower and now I must roll to the bakery and then to Great Harvest Warrenton for bread for our race tomorrow. Initially Matt was going to go, but since I have an audiobook and less talent doing heavy lifting of things like signs, I’m going instead.

    Is the smoothie thick? How do you decide every day what you want for meals – just go by “mood”?

    BodyPump is awesome! One of my goals for the year was to do that at least 1x week. I haven’t been that consistent, but I plan to get it together! 🙂

    Love the tofu chunks and that you have tortillas in the freezer. For some reason, it never dawned on me to keep a stash of food like that in the freezer. Great tip!

    Bahhhhhh I’m interning with a lady who is a baker for farmers markets and makes all natural foods!! SOOOOO EXCITED and it made think of you. She wants to start selling her hummus at wholefoods!!!

    I think it’s safe to say that you help Great Harvests around the country with their business. Example, every time I see delicious bread in your posts, it reminds me I need to make a trip to my GH. Love that stuff so much. Yesterday I picked up half loaves of Dakota and Cinnamon Chip. Half loaves are perfect because I can get two and enjoy them without them getting stale.

    The taco looks good! It has ingredients in it that I would have never thought to put together. You are very creative!
