Night Off

Can’t talk – tendinitis –like injury to the space-bar thumb has returned with a vengeance! Ouch. Ouch! Gotta stop typing!

It was so nice to have the evening off to be at home. I know I’ve had weekends off these past 6.5 weeks, but there’s something even more relaxing about a weeknight. No social festivities, household/yard chores, traveling, etc.

The husband and I went for a wonderful walk when he got home. It’s like FALL out there! Not too hot at all and with beautiful shadows.

I waited all evening to get hungry but I never did – that lunch was really bigger than it seemed with all the vegetable oil and butter involved. We decided on simple salads with CSA greens and grilled vegetables when we returned from our walk.

The base is greens with a balsamic-Annie’s Woodstock blend dressing.

Then there are layers of grilled zucchini , squash and carrots .

Then toppings of sliced jicama , hand-picked blackberries , walnuts and a bit of granola !

Getting to bed to make room for a VERY early morning gym trip tomorrow. I made a smoothie to grab and go tonight and the blender is clean. We’ll see how it holds up! Look for a report first thing 🙂

    Hi Kath, i just read about excessive intake of vitamine A. I love pumpkins and i could eat them everyday every meal. Usually i eat 300-400 g (raw weight) for a meal once a day, do you think that’s too much?
    Another concern i have is to eat too much whole grains. Some studies say that eating only whole grains might impede absortion of vitamines, protains and fat which is bad. Have u hear about that?

    i love the simplicity of your salad — and the blackberries. enjoy the VERY early morning gym!

    as for having that ‘weekday down time’ — maybe it’s a sign you need to have a few weekend days where you have nothing planned other than a good book & time with matt 🙂 i did that recently and it was wonderful. while i’m definitely a social person, i need me-time to really feel balanced.

    Here’s some info on Vit A. According to Google, 1 cup of cooked pumpkin has abut 2,600 IU (I’m not sure what 400 grams looks like). If you think you’re nearing the UL (upper limits), perhaps look into a vitamin supplement that does NOT have vitamin A. Generally those who reach toxic levels are taking large amounts of supplements.

    That whole grain rumer is hog wash! There’s nothing wrong with eating whole grains as long as your diet is balanced.

    not nutrition related or i quoting simpsons, per usual but….

    just felt like announcing – just accepted to a dual major, dual certification graduate program for my M.Ed.

    So long, cubicle world! Four years of soul crushing corporate world. Time to be sauntering off.
