Neverending

Thanks for patiently waiting so I could take the day to play!

Surprisingly, today felt like SUCH a long day!! In contrast to my weeknights when time flies, today just dragged on in the best way possible. I felt like I had time to get so much done.

Emily came over mid-morning and we’re working on sending her over to WordPress.

Floors were cleaned by Matt. And the yard was mowed.

Can I just say that I am LOVING having empty shelves in my house!?! My mind feels so clear!!

I broke for lunch around 1PM and it was super fast and easy.

I plopped a leftover bean burger onto leftover salad along with some leftover grilled veggies and leftover pita chips. Totally deliciousness!

I cleaned and sorted TONS and TONS of papers from school, my internship and 5 years of adulthood. GRUFF.

After snacktime, I met Emily for a much-needed pedicure!

We went to a new location of Polished. Super swank. Very cool + modern! Wish I’d been in the mood for wine! Our pedis were only $25 but we didn’t feel the massage and treatments were as long as we’d hoped.

After pedis we went by EarthFare for $61 worth of highly-organic delicious produce (plus tempeh, cheese, and milk – eat up the pantry week!)

While at EarthFare I tasted an amazing heirloom tomato and knew dinner had to involve one.

Back when we were first dating we used to make "Bruschetta Pasta" which was just tomatoes, goat cheese, olive oil, balsamic and basil tossed with pasta. Tonight’s was the grown up version of that.

Whole wheat rotini, cooked and cooled to room temp, topped with chopped red + yellow heirlooms, local goat cheese, a drizzle of Garlic Gold olive oil, a tiny bit of balsamic, chopped oregano from our garden and sea salt.

It was amazzzzzzzzzzzzzing!!! Dad, aren’t you so proud of me for eating RAW tomatoes and loving them!?

EarthFare has the BEST coupons!! In the past I’ve gotten free pounds of coffee, bags of apples, pineapple, trail mix – a huge variety!

This weeks special was a free quart of ORGANIC ice cream with a $5 purchase. Score!!

    The pasta sounds so good! Aren’t heirloom tomatoes the best? They have so so much more flavor than regular ones.

    An EarthFare just opened in my home town in May and ones opening here in a few weeks!! I can’t wait. While home, I was there 4 out of the 5 days they were open haha. And their coupons are practically a steal. Anyway, your pedi looks great!

    Just wondering your thoughts on the article below regarding exercise and when to eat (and how your body processes differently). It outlines the basic differences of both opinions / sides (although you have to read to the end to get there).

    PS – I was visiting today and they served white, fluffy storebought buns and all I could think of was GH bread. Oops, turning to be a bread snob!       Fun article!!

      This is an age-old debate. Both sides are right, really! I don’t think the research is enough to never eat before workouts, but I also think it’s good enough to say if you’re not hungry you don’t NEED to eat.

      I’m still confused on the whole metabolism thing (remember when I went to that talk in April on sports nutrition and I got confused!?). I think it all boils down to calories in, calories out. If you want to lose fat, you have to burn more than you eat. I don’t think timing is everything..

    1- Are you sure that burger is not a double choco chip cookie?? 2- Glad you had time to just do whatever you wanted today 3- I just started liking raw tomatoes within the last year or so 4- I made a similar dish but with garbanzo beans today 5- 🙂

    awww I miss Earthfare! I used to go to the one by my old house at least twice a week. It’s so much more quaint than Whole Foods!

    Also, your recipe seriously sounds like the perfect bowl of pasta. YUM. 🙂

    Oh, that pasta is going to be made with the very first heirlooms out of my garden!

    Totally random question: I just bought a loaf of Dakota, pre-sliced, and am wondering how best to store it: in fridge? in cupboard? Does it “go bad” fast after first opened?

      Don’t refrigerate it! The fridge causes sugars to crystalize, which will further dry the bread. Just keep it in the bag it came in, squeeze the air out, and ideally you’d put it in a cabinet, but on the counter will work – you just don’t want sunlight directly hitting it because it will cause condensation.

      If you do all this, you’ll be eating it minimum 7 days, but I’ve made them last as long as maybe 13 days.

    I love cold pasta salads in the summa time. PS-The herbed pizza dough i snagged (for free) from my local Great Harvest was awesome. Even had a hint of sweetness to it. It was just fabulous.

    Looks like a great day! I’ve always been so terrified to get a pedicure or manicure. I know a ton of friends who have ended up with horrible warts under their finger and toenails from them!

    I used to never eat tomatoes either! My parents died when they saw me eating them cooked in a dish and the other day, I ate one raw on a burger – everyone at the table gasped! 🙂 haha

    And funny story – I’m glad you got the strawberry ice cream too because when my husband opened it and saw that there were near as many strawberries as in the picture on the container, he thought we got a bad one. But, I was able to ease his mind with your picture and the fact that it tastes awesome!!

    So glad you were able to treat yourself to a pedicure. It sounded like you needed it.
    I wish I could unclutter our house but there is just so much clutter and so much space, I would have no idea where to start. Plus – I decide to toss some things out that haven’t been looked at or used in years, then can’t bring myself to do it.

    I was just catching up on my Google Reader and thought I recognized the background in your pedicure photo. And yep, just like you said — Polished! I am from Central Florida, but was up in NC a few weeks ago for a wedding. The bridesmaids luncheon was held at Polished. It’s such a pretty place, and I love the manicure bar. I totally agree with you — the leg massage was lacking a bit. But, the ambiance almost made up for it. 🙂
