What was in your lunchbox?

Mine included some farm-fresh sugar snap peas (surprisingly sweet!), plus leftover tostada from dinner this week, including another version of our avocado crema – this time 50% avocado and greek yogurt mixed with southwest seasoning and lemon juice.

I’m off to run a bunch of errands, including the task of having our bakery loan docs renewed by signing 1,000 pages with my John Hancock! Good thing I like signing my name : )

    I used to squiggle, but then my last job required me to become a notary to I had to learn how to actually sign my name. Now it’s a mix of the two…some letters mix with some squiggles

    My grandparents grow sugar snap peas, I always loved to run into the garden and eat them right there!! They have a very, very big garden since they grow EVERYTHING from fruits to vegetabes, they even have thei own watermelons, I can’t wait for August to come to visit them!

    Lol about signing your name – I used to practice my signature all the time when I was younger and in school. It’s gotten significantly less swirly than it used to be (no hearts to dot the i’s now either.) Have fun! 🙂

    I had sugar snaps too! Interestingly sparked a conversation in the lunch room on difference between snow peas, sugar snap peas, and mange-tout peas. 🙂

    You like signing your name?? I was over it before my internship ended. When I’m asked to sign my name outside of work I always have an “are you kidding me?” look on my face. Haaaate signing my name!

    As someone with a massive sweet tooth who always battles sugar cravings, I’d love to hear your take on natural sugar (the watermelon made me think of it, along with your BERF post this morning). Obviously 4 slices of watermelon offer more nutrients that a Snicker’s bar, but I’m thinking the grams of sugar wouldnt be that muuuuuuch different. When calculating sugar intake for the day you have to count natural sugar too, right?

      Yeah, but I wouldn’t bother to count natural sugars from fruit or dairy unless you’re eating a huuuuge amount of them.

      Sugar in 2 cups of watermelon = 20 grams
      Sugar in snickers bar = 28 grams

      BUT –

      Calories in 2 cups watermelon = 100
      Calories in Snickers = 271

      That’s a big diff.

      Plus real food vs. no real food, plus antioxidants, plus real food verses not.

    I love signing my name as well, because I make lots ‘o swirls in my signature 🙂 I used to practice my signature when I was a little girl, because I thought one day I might be famous, and signing autographs all the time 🙂

    My signature is more of a scribble. Has been since my junior year of college – I worked as an RA and checked out about 90 students in one afternoon – out of 230 in the building. It was.. a busy day.

    that crema sounds like it might be the perfect way for me to eat avocado. 🙂 so delicious. but I could easily down a whole avocado for a snack. I love the idea of a creamy protein addition.

    Mmmmm…. sugar snap peas! My favorite! We’ve been getting them in our CSA box the last couple of weeks and it’s a good thing my husband doesn’t like them– more for me!! He can have all the watermelon he wants, I’ll pass. 🙂
