MultiMonday

Not just another manic Monday – the last manic Monday!!!

And just another pancake Monday

I showered and got ready in my dream bathroom (more on that later!) while Matt created some ‘cakes.

I was in charge of turning the coffee pot on :mrgreen:

Two of the pancakes were turned into "dough balls" of battery. Oh my heavens…

The others had nutz and flax

Topped with the good stuff – banana, coconut butter (which is now solid again since Karen keeps her air down low!), a tsp of Biscoff, and a drizzle of Sunflower butter. [Note I said drizzle – I am obsessed with the texture of this stuff!]

I have never been one to be that obsessed with pancakes – obviously oatmeal has been my love. But these pancakes are a million times better than any others I’ve ever had. Not sure if it’s the Great Harvest mix (probably!), the TLC that goes into Matt making them for me (probably!) or the multiple textures and toppings he combines (probably!) but they are my new favorite for sure.

The kitchen table has the worst natural light in the house – have to figure this one out!

Off to work – with a shorter commute! Today is my first day of staff relief, which means I get my own floors and will have an RD signing off behind me. Excitement!

    That looks soo yummy! I’ve never been huge on pancakes-more of a waffle girl. But I want to try those! Are they vegan?
    OH, and I agree, sunbutter is the most drizzle-able nut butter of them ALL.

    Good luck with staff relief, Kath! It was definitely one of my fave parts of clinical, and I felt like a real dietitian, going to rounds, talking w/ physicians and residents and wearing a pager. πŸ™‚ You’ll love it!

    Yay for your last Monday! The end is in sight! I have the same problem with lighting in my condo. We have one whole wall made completely of a gigantic floor to ceiling window but the kitchen and dining room table are on the other side so I’ve started doing some photographing in the floor next to the window.

    Oh exciting! Staff relief seems like such an accomplishment. I can’t believe how fast your internship seemed to go by (although I’m sure it felt longer for you πŸ˜‰ ).

    The pancakes look delicious!! I haven’t had any in ages, but it’s definitely one of my favorite of breakfasts as well. πŸ˜€

    I had to tell you this funny story, because I thought you’d appreciate it. The other day I was at work, and when I went on break I noticed someone had brought in a ton of old magazines. The one on the top was Woman’s World or something like that…and there was you on the cover. It was from like 3 years ago!
