Three’s Company!

Running a household is much easier when you have 3 people to split the work! Matt took care of house stuff, Karen went grocery shopping and I organized my things

After an hour of reading on the couch (OMG – I relaxed!) we set out to assemble the dinner Karen made this morning – Chili + Salad.

This turkey + bean chili simmered on the stove all day.

I assembled the salad! Romaine, zucchini, yellow pepper, tomato, pine nuts, feta tossed in Garlic Gold Lemon Vinaigrette.

[On a tangent about Garlic Gold…Matt and I have determined that no product has ever pleasantly surprised us more. I rolled my eyes when I got the sample pack in the mail – I don’t really like garlic that much. But not because of the flavor, because I will taste it for hours and hours after eating it so I always regret it. But THIS STUFF is fabulous and I have ZERO garlic breath after eating it!! The secret is that it’s roasted. I’ve been putting the oil on my salads for a few weeks now and feel that when it’s gone I’ll really miss it. Matt proclaimed that we will have to buy more. The Meyer Lemon Vinaigrette is realllly good too. Like the oil plus lemon and herb. It makes a fantastic flavorful salad dressing!]

I topped my chili with Oikos and some Fritos – sent by Frito Lay in honor of their sponsorship at the Summit! While Fritos aren’t really a "health food", simple ingredients work for me. They tasted great on our chili.

I’ve slept horribly the past two nights, waking up at 5:30 and tossing and turning for an hour before sleeping again from 6:30-7:30. Tomorrow I have to wake up at 5:30 so hopefully I can get to sleep on time and have a good night’s rest.

    Good luck sleeping – I hate when I don’t sleep well and then I get anxious about the next night… always makes it worse! And hurrah for a meal that actually suits the current winter weather in Australia. Chili! Nom nom nom…

    what book are you reading? the chili looks good, any thoughts on serving this type of chili cold? (since it has been a steady 100 degrees in the south for a week? 🙂

    hey kath,
    totally random comment but i just took my first DELTA flight in a loooong time, and they served Biscoff w/the coffee! i have to admit though, not sure why you like these so much — they are just ginger snap cookies. meh. but at least the anticipation is over…
    p.s.:i bet the biscoff is a jar is good though

      OMG they are so not “just ginger snaps!” The flavor profile is 10x more complex than a regular g-snap.

    Fritos might not be “good” for you but they taste so darn good! Hope you sleep better tonight! I am one cranky girl when I don’t get enough sleep and tend to eat more to compensate for the lack of energy.

    One of the things I love about my mom living with us is that 3 people really do get things done faster and more efficiently than just one or 2. It’s a pleasure to have a helper even when another is busy. Extended families rock!

    I hope you get some good night sleep. I know how frustrating it gets waking up so early, when you’re tired but you can’t get back to sleep. It’s been happening to me for a while, and I pretty much don’t like it :/

    You should ask her where her salad bowls are from! I have some plastic ones from Target that are similar (shallow plate/bowls) but I would LOVE to find a non-plastic set.
