Mr. Paper, My Boss

I went running first thing because today is ALL ABOUT THE PAPER!

I ran 6 miles, but they were a slow and rather difficult 6 today. Normally when I’m running fast spurt I look down and see 8:18 pace or so, and today when I thought I was running fast I looked down to see 9:15! I think my legs were a little tired from the mountain hike on Sunday and needed more rest!

Once home and showered, I was all over my breakfast and made this amazing bowl:

  • 1/3 cup oats, milk, water, pinch salt
  • 1 tiny banana
  • Splash vanilla
  • 1 tbsp raisins
  • Heaping 1/4 cup cottage cheese, stirred in at end
  • Leftover Great Harvest Carrot Raisin Walnut muffin
  • Maranatha AB

    Whenever I drink coffee with breakfast, it makes me over the top full! Since it’s mostly liquid, I bet your tum will feel back to normal soon 🙂

    So jealous of your Great Harvest muffin oatmeal. NYC has a lot of things, but we don’t have muffins like THAT!

    Good luck with paper writing today!! A nice, long run and big bowl of oats sounds like the perfect combination to start the day 🙂

    Also, I was at Crate & Barrel yesterday and they had a huge bowl FULL of your little green spoons! I have to try one with my oatmeal some day…

    my run today was a toughie too! I pushed through it for 4.2 miles but 1)never as fun on the treadmill 2) had a killer leg workout yesterday so It was a toughie today for sure 🙂

    yummy breakfast, that would motivate me to run faster if I knew I was coming home to that!

    I checked out the homamde granola bars from the chic life and they look so good! I printed the recipe 🙂

    Cottage cheese in oatmeal? I’ve never seen that before, what does it end up tasting like? It seems like it could be a nice way to add some extra protein to it.

    You converted me. I didn’t think I’d like baked goods on my oatmeal, but I was curious. So today, I had …

    oatmeal with shredded apple, crumbled walnuts, and a crumbled sliver of Trader Joe’s apple bread, with a drizzle of honey. It was GREAT … and I was surprised to find that the bread was better, texturally, than the actual apple. I don’t know … I love ripe pear in my oatmeal, but apple doesn’t seem quite right. It was very virtuous and hearty, though … kept me going all morning.

    I do have a question, though. Muffins are probably my worst trigger food for overeating. I LOVE them, and if I didn’t have a family to feed and answer to, I could probably have coffee-and-a-muffin for breakfast, lunch and dinner.

    HOW do you eat just a little bit of a muffin? You often mention “leftover muffin,” and that just doesn’t compute with me. 🙁

    That bowl looks awesome!! And it does look really filling… oatmeal alone fills me up so much! I am sure you will digest that pretty fast though considering your 6 mile run.. nice job!

    If you saw how big these muffins are, you’d know how I can portion them out. They’re like 2 of my fists. But so glad you liked the baked goods on oats! I told you guys it was surprisingly amazing.
