Mini Me(al)

I FEEL ORGANIZED!!!!

I got a lot of cleaning finished, most of my projects complete on the computer (still have one to go) and worked straight through till 1:30 PM  when I decided to have a snack before I left for my workout. I wasn’t really hungry for lunch, but I was feeling empty so I had a smallish lunch:

A quesadilla stuffed with Laughing Cow, red bell pepper, mustard, spinach and jalapeno cheese, plus a tiny piece of leftover chicken

And cheerrrrrriiiiies!!! Sadly they are deteriorating rapidly in the mold factor so I’m trying to eat the good ones as fast as I can.

The last flavor in the new La Croix pack: grapefruit. LOVED IT!! I like these fruity ones way more than the other lemon/lime mix.

As soon as I digest I’m off on an exercise expedition!

    Your lunch looks short and sweet. I’m a big fan of Laughing Cow cheese. It’s one of the dairy products that has the least effects on my lactose intolerant tum-tum. 🙂

    What kind of tortilla is that?

    Seeing the La Croix at your meals lately has made me want to try some. Do you kow if it is only sold in Costcos down south? Or can I find it up here in NJ too?

    You can also pit and freeze cherries before they go bad. Yummy for smoothies 🙂

    I am totally overloading on cherries this week – I just can’t get enough since the weather is so warm. Good luck making the most of them before they turn!

    I gotta find out if my Costco has those seltzers!

    I really should just make my own since I have the sodastream soda maker… but you have me craving the ones in a can. ….must…. resist… spending way too much money on things I don’t need…

    Oh no, that stinks about your cherries! That’s why it’s hard for me to buy in bulk – I always think I’ll eat the stuff fast enough so that it won’t go bad, but it just never happens!! You should try putting a few in your smoothies!

    it is sad how cherries go bad so quickly! last summer i made a bunch of jam/preserves to deal with our abundance. i am hoping to dehydrate this year as dried cherries are teh awesome and are quite expensive.

    I just checked La Croix’s website. They sell them at both Costco and Target…they did not specifically say where, so I’m assuming at all stores. yay!

    I love flavored seltzer. Vintage raspberry is my fav!

    I bought 3 pints of blueberries this week that were on sale and it’s hard to eat them fast enough. Might have to freeze them!

    I’ll have to look for the grapefruit one – I hated the berry one and ended giving it away!

    Seriously, my daughter is going to be exactly like you when she grows up – I think that’s why she volunteers to clean because she’s set the bar so high, I will never attain her perfectionism!

    Flash freeze your cherries! It can be labor intensive but worth it, especially since you got them so cheap. Pit them and then spread them out on a baking sheet. Stick them in the freezer for an hour and then you can throw them in a ziploc bag. You can go in and grab a handful at a time. I do this whenever raspberries or cherries go on sale.

    It doesn’t take long for them to thaw and I actually like them semi-frozen on yogurt. You could go ahead and put them on overnight oats and they will thaw in the fridge while you sleep!
