Millet In The Skillet

After a few hours of online work this morning, I was ready to go to the gym and discovered it was raining. Humph. I decided to wait it out a bit, and after a while hunger had built and I traded my workout for a leisurely lunch. I usually exercise right before lunch so I’ll be hungry, but that doesn’t leave me much time to cook. I’m often ready to throw together a salad and dig in! So today I made a more time-intensive lunch – a harmony bowl of cinnamon sweet potato, millet and veggies.

I cubed a medium sweet potato and tossed it in a little olive oil, sea salt and cinnamon. Baked at 400* for 30 minutes.

The millet was cooked stove-top for about 30 minutes too. Here’s what millet is, the nutritional info and where you can buy it (also in bulk bins at health food stores). It tastes like a cross between grits and rice. It’s high in fiber, manganese and B vitamins, has calcium, protein and is a whole grain.

So mixed into this bowl:

  • ~1 cup sweet potato (maybe a little more)
  • ~1/2 a cup cooked millet
  • 1 small cucumber, diced
  • 1/2 a tomato, diced
  • 1/2 a yellow bell pepper, diced
  • 1 small ear of grilled corn, cut off cob
  • ~1 tbsp chopped walnuts
  • ~1 tbsp craisins
  • More cinnamon
  • Drizzle maple
  • Pinch salt

A whole lunch in a bowl that was quite filling!

    Yummy-looking lunch. You leave the skin on the potatoes… any particular reason? I also did the same yesterday when it came time to the gym… it was pouring buckets out so I waited it out, then got too hungry and ended up dinner and nixing any chance of a workout. I was annoyed but at least I got to eat a good dinner and finish a book- FYI The Glass House by Jeannette Walls is fantastic. A heart-wrenching, comic, well-written memoir.

    Are you excited or nervous about it?? You are probably going to learn so much!

    I know for me.. I did all of my teacher training, but I don’t think I REALLY learned all of the ins and outs of being a teacher until I had a class of my own. It’s amazing how things are so different when you are actually physically working in the field you trained for.

    Thanks for the link for the coupons! It’s perfect since it’s Buy One, Get One Free Oikos at my grocery store. I would love there to be strawberry – it’s my favorite flavor and I’ve been missing having a Greek version of it.

    A great thing about millet is it is also gluten free! I just found out I have Celiac Disease (gluten intolerance), which isn’t as bad as it sounds. I tried Food Should Taste Good Chips per your recommendation b/c they are also gluten free, and they really were delish. LaraBar’s are also gluten free for those who are interested.

    I think Celiac is becoming much more prevalent and since you’re becoming an RD I was hoping you could highlight some gluten free recipes for us 🙂 Thanks!

    I love your cutting board! (as seen in video) And I love the Office. But I’ve never heard tamari pronounced as tam-er-eye, it’s coool and funky haha. Personally, I say tuh-mar-ee. But that’s just me being plain jane.
    I also think that your use of sweeteners/natural sugars in your marinades to impart caramelization (and probably crunchiness too :D) is smart. I can’t believe I hadn’t thought of that before, d’oh.

    The Whole Foods near me has had the strawberry Oikos for a while now…interesting? It’s delish, but I still like the plain and honey the best. Thanks for the coupon links!
