Midpoint

Today was my day to pack the potluck lunch (I guess that means it’s not a potluck, eh?) I asked Kelsey what she would prefer and she chose a Tempeh PB&J.

This was really the mac daddy of PB&J. Slice of Great Harvest Dakota Bread, Barney Butter, TJ’s Blueberry Fruit Preserves (which I LOOOVE b/c there are whole blueberries in it) and a thin slice of tempeh (raw, plopped on). Loved all the chew and slight crunch from the tempeh.

I also packed sliced veggies…

…and a Lemon Tahini dip to go with them. This was (per person) 1 tsp tahini, 1 tsp lemon juice and about 1-2 tbsp greek yogurt. I don’t know about Kelsey, but I loved it.

I also packed a few wasabi peas

KLM brought strawberries! These were great and juicy (and organic I might add – related?)

Lastly, a bourbon pecan for dessert!

I saved a few veggies to munch on during my next 2 classes

Along with these to get me through the next 7 hours. One of Anne’s clif bars and an orange. I also believe there are more strawberries.

I’m off to write a lab report, my next Gather post and possibly another small paper. We shall see how productive I can be alone in a dark classroom! (K is meeting with a prof and our next classroom was open early).

    Will this be your first time trying the pear apple strudel CLIF? I have yet to try it but am VERY curious! My favorite flavor is the pumkin pie and white chocolate macadamia nut!

    And I LOVE wasabi peas, haven’t had any in ages though – they just made my grocery list – thanks for the reminder!

    Funny you had tempeh today – I finally tried your tempeh and pumpkin butter combo for lunch today, on a cinnamon raisin ezekiel english muffin, and it was AMAZING! You have rescued me from my lunch rut. Thanks so much. I’ll have to try the PB&J tempeh combo too.

    I don’t buy nuts that are covered in yummy things because I would eat them all day long.

    however, I DO take little sample cups of the candy peanuts (not sure of the real name) every time I go to whole foods and walk by the trail mix bar (YES, they have a trail mix bar). Those calories don’t count.

    Did you just use plain tempeh on the sandwiches? I’ve never tried it before and I saw many flavored varieties in the store last week. What do you recommend?

    Aw, your wasabi peas look like little toadstool mushrooms! Sorry if this is overkill, but I’m not sure if you read your old posts where I made a comment this morning–I just wanted to let you know that i made your nutty vanilla sweet potato + kale soup (http://madaboutudon.wordpress.com/2009/04/08/catchin-up/) and it was scrumptious!     Kath, I happened upon your blog a while ago and I have really enjoyed reading your adventures big and small.
    One question: Is it safe to eat tempeh raw? I have a few vegan cooks books that say you have to at least steam it for 10 – 15 minutes or cook it in something (stirfry or the oven). I think the package might even allude to this.
    I’m just wondering! It am intriqued by eating it raw, but because of what I have read it makes me quesy!

    This may be random but I was wondering if you have ever tried falafel? I love it but i’ve heard mixed reviews about how healthy it is.

    I don’t think being organic has anything to do with the strawberries being more delicious/ fresh, etc. I only buy non-organic stuff and yes, it tastes good. Maybe it’s just a matter of personal taste?

    Hi Kath,
    I’ll have you know I ordered 2 bags of the Fresh Market Spring blend online!! After reading about it and its flavors I HAD to try it…unfortunately there is no FM in Massachusetss (yet!)…so I am paying for shipping ahah! I was suprised you can’t get it whole bean! But I’m guessing maybe htey grind some of the other “flavors” into the coffee.

    Kath – Do you know what the difference is between milled and ground flax? I bought milled flax, but the recipe I have calls for ground flax. Are they actually the same thing?

    Samantha – just thought I’d throw in my 2 cents regarding falafel. I LOVE it!! Often it can be considered unhealthy bc the patties are fried, but they can also be baked. In fact, you can make your own (I think Far East makes a brand where you just add water and bake!) Then they have great nutritionals!!

    Interesting sandwich idea! This sounds weird, but I remember reading that tempeh is indigestible when it’s not cooked… I guess it’s not true then?

    if you used barney butter doesn’t that make it a mac daddy ab and j?? I used pumpkin butter and sunflower seed butter + tempeh and it was awesome(and kath inspired)

    I had never considered that it wasn’t safe to eat tempeh raw, mostly because I eat tofu raw. My package said nothing about it being dangerous or needing to be cooked. I submitted a question to the website – maybe they’ll let me know.

    Yes, and I’ve made it too, although not that great at home. In restaurants it is often fried, but home baked would be very healthy. Try Jessica’s recipe!

    From Tempeh.com:

    Can I eat raw tempeh?

    Normally, fresh tempeh is eaten cooked, either fried, steamed or boiled. Sometime people eat it raw, especially right after incubation when the product is very fresh. Raw tempeh will contain more vitamins than cooked tempeh and the enzymes of the mold will aid your digestion. There are no indications that raw tempeh is unhealthy. There are unsubstantiated claims from people who claim they feel better after eating raw tempeh.
