Who needs potato fries when lettuce makes you feel so good?

I went to early cycle this morning and met my friend Katherine. Fun times! We spun hard, and then finished with the core session the class ends with. And then I was dilly-dallying back downtown to my house, where I promptly got to work on massive loads of laundry. More fun times!

No Bull Burgers have easily become my favorite lunch. A dose of flavor and protein all packed into one nice little patty. 8 minutes in a skillet and I’m ready to go. I served today’s on a Honey Whole Wheat bun along with ketchup and mustard.

    wowww that is awesome Kath!! You look great on that cover, and the topic is so different from the regular food posts. And I can tell that those are some great tips–I have been trying to organize more according to your advice on clutter too. I’m thinking outside of the box, haha. I’m not necessarily the NEATEST person.

    Quick question for you! How come you usually only dress your salad greens with olive oil and salt?? Where’s the vinegar or acidity of choice (lemon juice)!? I just always wondered that! 🙂

      I think vinegar is too strong for lettuce. And too messy – it splatters on my shirt.

      And lemon juice is delicious but also too labor intensive for a quick lunch 🙂

        So why don’t you pre-slice a lemon so you can grab a lemon wedge for your salads? As someone who makes her living documenting her food/cooking, I don’t think this is too labor intensive!

          Good grief, are you really nitpicking about whether or not someone you don’t know uses lemon juice on her salad? Maybe time’s better spent going and cutting up some lemon wedges. 😉

              I think Meredith was just offering a solution to the time issue. And this is a food blog – a forum where people should be able to ask basic food questions, i.e., the components in a featured salad dressing, without getting ridiculed.

              Are lemons a universal thing to put on salads or something??? I don’t get it. For what it’s worth as well, some people don’t like the acidity and it can hard on stomachs (everyone is different).

                Salad dressings are certainly a matter of personal taste. Traditionally, and this is what I think Meredith is referring to, salad dressings (or any sauce) have a fat component like olive oil and an acid component like vinegar or lemon. Then, typically mustard is added to emulsify and other things are added to flavor – shallots, garlic, salt and pepper, chili flakes, whatever you want.

I mean, sure, I get what Meredith is saying – but to me, it’s like telling somebody they should be putting jam on their peanut butter sandwich because jam and PB traditionally go together…true, but it’s not universal or necessary.

            Ziploc bag, moist (i hate that word) paper towel. That should keep it from drying out for a few days if you do decide to go the lemon route.

              Well, I’d personally like to thank Josie for the recommendation (I hate the word moist, too 😉 – I was gonna chime in yesterday that it bothers me when my lemons/lime dry out, and was going to ask if someone knew what to do about that. My friend always tells me not to put them in the fridge! Like Kath, I don’t like bottled dressings (or onions..eww), and I don’t like vinegar for the same reason she stated, so lemon is always my choice if I add anything besides oil.

    Just read the Breathe article and LOVED it! I always thought my mom was a freak about trying to make things organized and now that I’m 40 and almost grown-up, I think I finally understand.

    I love your statement (paraphrased), Who needs fries when salad makes you feel so good? I used to eat fries ALL the time, just because they were available and “easier”, but ordering / prepping a side salad is just as easy, and honestly, can be just as tasty! If people realized how it is NOT a hassle to eat healthy, the world would be a much better place!

        okay, just because Kath made a brief mention of choosing a healthier side option doesn’t have anything to do with her being out of touch with the real world. This is not a blog where Kath shares her education about famines in Ethiopia or articles on nutritionally dense foods for developing nations– she shares pictures of her lunches. Just because this is her job, and this lunch with a side salad is what she shared today does not allow anyone to justifiably say she is getting carried away with privilege. Food-blogging is her job, not showing off her knowledge of worldly topics.

            The bun was not processed – it was made from scratch the day before with wheat that was milled that day and has 5 ingredients: whole wheat flour, water, salt, honey, yeast.

            I would be more worried about the Biscoff Spread: Ingredients: Biscoff 57% (Wheat flour, Sugar, Vegetable oils (contains one or more of soy bean oil, sunflower oil, canola oil, palm oil), Soy flour, Brown sugar, Leavening (sodium bicarbonate), Salt, Cinnamon), Canola oil, Sugar, Emulsifier (soy lecithin), Citric acid.

    I passed by the magazine here in Asheville at Greenlife grocery last night, thought the cover looked familiar, and then realized it was you! I’d never read Breathe before, but it’s interesting that it is a combination of Asheville & Charlottesville (stories, ads etc) – my two homes!

        Would you fin “turd” more appropriate? Honestly, they are not the most appealing thing to look at. Not commenting on taste, but appearance is what it is.

        If someone said my food looked terrible, and it really did look terrible, I wouldn’t care – I’m the one eating it, an taste speaks for itself.

    Congradulations on your cover shot! I converted to glass jars for storage a few years ago…I use them to freeze jam, stock, spaghetti and pizza sauce and for my rice, pasta and quinoa. I love the shelf idea next to your stove…I could so do that! Great project for hubbie!

    Your article has a lot of useful tips, and as a self proclaimed slob, I particularly like the one about not folding everything 🙂 Jokes aside, I need some organization in my life. I’ve been trying to hunt down some ball jars because I hate having so many baggies in the pantry. Once I find the jars, my next item to tackle will be the medicine cabinet and under sink storage…I should take before and after photos. Baby steps!

    Great articles, Kath! Just a few questions…do you still use soap nuts in your laundry also or have you gone to all Method? And do all Great Harvest Bakeries carry the buns? The nearest one to me is about an hour away, but those look great and some things are worth a little drive. I keep telling my husband he should think about opening one in our town. I would love to get some more of the Cville cluster granola, too, but I’m pretty sure that is unique to your store. Any plans for a sale again soon?

      Still use soap nuts! I also have Method in my house for Matt to use when he does his laundry – or when I feel something is really really dirty.

      The bun is a Honey Whole Wheat roll and all GH’s should have it

      We hope to do more granola after Christmas when things at the bakery slow down!

    Wait, now I’m curious about deleted comments. How do you determine what stays & what goes? Just downright hurtful, I assume…? People can be SO rude. My favorite is the woman telling you your burger looks like poo. Umm….thanks?? Happy lunchtime to you too!! Why would someone take the time and energy to tell you your lunch looks like poo?? Just click that magical little X if you find it so repulsive!! And heaven forbid if you just threw on premade salad dressing without taking the time to cut up your lemons and whisk something perfect together. Sheesh, can’t please em all can you?

            I don’t agree with rude comments, but I also recoil at the idea that if someone disagrees with a blogger they should just stop reading. It’s too extreme.

            And also, I’m sure you’re right about this person who made the rude comment, and she probably doesn’t invite people into her home and display pictures of herself on the internet – but let’s not forget that this is Kath’s job. It’s not like it’s a volunteer blog that doesn’t make her money.

              Okay, so just because it is her job and she gets paid for it, we’re allowed to make snarky, rude, unproductive comments? There’s one thing for healthy debate, but calling someone so big they must look pregnant, or telling someone their burger they obviously enjoyed looks like their dog’s poo.. there’s no constructive criticism there… that’s just hurtful and rude. I don’t care if Kath gets paid or not.. it doesn’t make it right….? just because you get paid at your work versus working in a non-profit, your clients are allowed to make snarky comments to you? I don’t think so… this is her “work place” and people are so brave and bold behind the computer screen. Think if you would say it to Kath’s face or not…. then would you take the time and energy to type it out?

                and to clarify, I didn’t suggest the reader stop reading Kath’s blog in its entirety. I meant if she found the one image of the burger that repulsive, she can just click away. I have done that numerous times for bloggers I love, but might be turned off by a particular dish they made. I don’t find it necessary to tell them their meal clearly looked like poo.. that’s just rude and unnecessary. What was the point of that comment? That’s all I’m saying here.

                I do not understand this. You think no one should ever get criticism in their work? How would anyone ever grow? And I agree, those comments were rude. But many aren’t. Like a suggestion on using lemon quickly!
                And you get paid to work in a non=profit. It only means you cannot use extra profit for bonuses, it must got back into the organization. Anyway, yes clients do get to make snarky comments. I think that’s pretty normal. It’s always rude and unappreciated, but it’s certainly not a novel concept. And it’s usually accepted and a business owner would like to keep all clients’ business. I do not understand why people think monetized blogs should have absolutely no standards or criticism.

                  CONSTRUCTIVE criticism versus blatant rude criticism. big difference. it’s like when i ask my husband to give me feedback on a meal. saying it is disgusting is mean and hurtful. saying, “add more sauce next time” is constructive. I don’t think your boss tells you your work is shit… he or she gives you constructive criticism on how to grow. of course we all need a little criticism. that’s not what is occurring here.

                  Your boss is also different from your customers. I’m not saying this is a great way for things to be, but it’s true. Customers get frustrated and rude at times. I’d imagine, almost everyone has gotten frustrated with a business at some point and maybe acted in a way they regret. It’s just not a good business practice to ignore your customers.

                Laura: Yes, people who write on the internet for their job, and get paid for it, do open themselves up to criticism, even “snarky, rude, unproductive” criticism. If you look at Slate, The New York Times, or most professional blogs (especially ones that are not in the “healthy living blog” genre) there is a proliferation of nonconstructive criticism posted in article comments that is still perfectly acceptable (albeit undesirable) to those professional writers and the sites they write for. It’s what you are in for when you are a professional writer, no matter your subject matter.

                  Exactly Katya. By choosing to blog, individuals must realise that with the (many) positive comments, there will also be some that are not to the individuals taste. By deleting comments that may paint the individual in a bad light, or question some of their activities, it dramatically reduces the ability of viewers to voice their opinions.

              Good point. I for one can’t stand when blogger cry “poor little me being picked on” when they are being PAID. Be professional, accept criticism and grow from it. Don’t sick your family/friends/blog white knighter to fight for. Remember, your readers are your customers. If you don’t have a thick skin, you could shut down your blog… but that also involves shutting down the gravy train.

            Late to the game here, but sheesh. Kath is a grown woman with a successful, professional blog and can decide for herself whether the negative comments are valid and/or deserving of her time & energy. Readers getting into spats is totally bizarre, especially when people are taking up for her on the comments she has already addressed. The idea behind blogging is about having a relationship with readers and comments are where the real discussion is supposed to happen! Questions, comments and suggestions (even if straightforward and potentially critical) are typically a sign that people are actually interested in the writer and their content, otherwise they wouldn’t read and certainly wouldn’t take the time to comment. I know I have commented minor complaints/suggestions before and she has always responded graciously. It seems to me like she wants the feedback (as any pro-blogger or writer would) and doesn’t take it personally when it isn’t….why certain readers take any negative comment so personally baffles me. Kath, do you have a comment policy? I looked around but couldn’t find one.

    Kath, I was reading through your article and this sentence really confused me:

    ” Real people have organized homes that are serene, clutter-free and functional”

    If someone had a cluttered home, you know, because they’re juggling working 9-11 hours a day, fitting in exercise, cooking, etc. – are they not real people? What makes a person fake vs. real?

    If you meant to say real people as in not within the pages of a magazine, it was a really awkward way to put it.

      My point here was that organized homes are not limited to fictional magazine pages – real people have them. Real being the opposite of a magazine shoot not “good” or “bad.” I’m sure there are plenty of super super busy people with very neat homes and I’m sure there are plenty of people with less busy schedules that are messy.

    Oh my goodness, Kath only shares a small portion of her day-to-day schedule! Just because she doesn’t work traditional hours in an office job does not mean she does not work hard. If I could put money on anything, it would be that she actually spends a lot of early mornings and late nights working because her job(s) is/are so nontraditional. Yes, I agree that some of the way in which the sentences in the article are worded can be interpreted as ‘smug’ but it’s the reader’s choice as to how to interpret them. I choose to give Kath the benefit of the doubt and think ‘oh, she probably didn’t intend to completely offend a ton of people by saying something like that’ and if anyone chooses to take the other road, that is most definitely your problem and has nothing to do with Kath being out of touch with reality.

      Just to point out that Kath often says she gets up when it’s daylight to work out – that isn’t early when a lot of people are up before the crack of dawn. And she usually writes before she goes to bed – which isn’t late. I’m not playing devil’s advocate, but just saying that she seems to keep normal hours and isn’t overworked by any means. I have nothing against nor do I care about her schedule! I think people need to put more energy into worrying about themselves…

    The No Bull Burgers have onions in them. Do they make it special for you with no onions, or you don’t hate onions that much as long as it’s smooshed with other ingredients? (Just curious, because I personally don’t like raw onions, but in food it adds a lot of flavor.)

      The onions are sauteed before they go into the burger, which really reduces their impact. If they were raw in the patty, I wouldn’t be able to eat them.

    Kath, I think you do a wonderful job talking about your life through pictures and words on a blog. I read through the argumentative comments and laughed. I do not understand why people feel the need to nit-pick things that are irrelevant in the grand scheme of things.

But I do love my old cookbooks, including the one I whet my young married teeth on, “The Silver Palate,” and recently bought a beauty “Around My French Table” by Dorrie Greenspan, as a gift. Am also reading “Blood Bones and Butter” by Gabrielle Hamilton – a chef’s memoir!
