Martinis + Mac

When I left y’all last I was getting little hungry but only had about an hour to go until dinner. Normally I’d grab a handful of trail mix or something, but I had the thought of a spinach smoothie since I put it back in the fridge at lunch. So I made a Superfoodtini 😉

Count the superfoods!

  • 1/2 cup frozen mixed berries
  • 1/2 cup plain yogurt
  • 1/2 cup pumpkin
  • 1/2 cup milk
  • 1 cup spinach

But I’ll admit, it was lacking in the flavor department. So I remembered the POM Wonderful sample shipment that arrived this morning! With more antioxidants than red wine and a sweet kick, it was the perfect addition to turn my smoothie into a super cocktail. I added about a shot glass worth (and took some swigs from the bottle). I love POM juice and used to make virgin cocktail spritzers with it. I need to get some seltzer so I can do it again 🙂

Topped with a cherry, of course. I had some leftover smoothie that wouldn’t fit in the glass.

The husband was in charge of dinner tonight so I could keep working.

We debated on the recipes – we have tofu on hand, a sweet potato and some fresh rye bread, but we settled on one of these with the remaining veggies in the fridge:

He roasted the veggies for 30 minutes at 400*, which gave them so much flavor – shrooms, okra, peppers, tomatoes.

I had about a cup of mac and half the veggies – plus some hot sauce.

    You have suck beautiful placements, I love them! Roasted veggies on top of mac and cheese is the way to go for sure, so good.

    This is sooo my kind of dinneR!! yum!!! 🙂 pom juice is sooo AMAZINGLY GOOD!!! So is the POM TEA if you have not tried it you SHOULD!! yum.

    I love that kind of mac and cheese – it’s so much better than the powdered Annie’s. All of the added veggies make it a well-rounded meal 🙂

    How do you like that Annie’s Mac and Cheese? I’ve had the basic but never the “deluxe”. As a college student, cheap meals like mac and cheese are a necessity!

    I absolutely LOVE that other people are catching on to putting greens in their smoothies! I drink a green smoothie almost every day. Way to go on drinking your greens, Kath!

    Hi Kath! Just wanted to let you know that I made Kelsey’s Muesli Bars (or at least my version of them) tonight. I have a bodybugg, and I input all of the ingredients as you listed them and they came out to about 210 calories each according to my software. So I tweaked them quite a bit and got them down to 158 calories each for 12 bars instead of 10. My main ingredients were almond slivers, walnuts, Old Wessex 5 Grain Cereal, and dried cranberries. I cut the flax and the brown sugar, and used Splenda instead (I know it’s unnatural, but I gotta do what I gotta do). I am quite enjoying them, so thanks for the recipe!
