Lush + Lazy

A gorgeous day out there – lush but not too hot!

Unfortunately / fortunately, I’ve been inside all morning just chillin’ with babe.

Around 1 O’clock, lunch beckoned. I haven’t had cravings for this much healthy food in one bowl since the year was 2011!

Lettuce, RED PEPPER, CARROTS, sea salt, honey, olive oil, avocado, egg, goat cheese, hummus and a date. A fabulous salad packed with flavor variety and nutrition!!

Food of the week: blue corn chips. They hit every craving nerve in my body!

I started reading Breastfeeding Made Simple and ordered something fun for the nursery this morning. Happy August Saturday!

    That lunch looks SO GOOD. I never think to have an egg over a salad like that…I’ll have to try it. And I must say, I envy your ability to portion control! You seem to only have a few of those tortilla chips at once…corn tortilla chips are one of my weaknesses and the bag would probably gone by the end of my lunch, haha.

    This might sound weird, but your grass/yard looks so great! The past month has been so hot & dry here that I almost forgot how green & healthy the grass should look — Lush indeed 🙂

    Your salad looks a little like the ones you get at Whole Foods — except the ones you usually get at Whole Foods have a plethora of ingredients 🙂

    Hi Kath,

    I apologize, because I’m sure you’ve covered this in a post or comments at some point, but I don’t remember seeing it. Your eggs always look so pretty! How do you cook them? I figured you must start out making them over-easy, and then burst the yolks at some point. But if that’s how, I’m definitely messing up the timing 🙂

      Yep, that’s just what I do. I plop them in a nonstick pan and then poke the yolk so it spreads. Then I just let it cook for about 5 minutes on medium low heat until everything is no longer runny
