Lunch On The Mediterranean

I completed my writing this morning (whew) but then I had no motivation to do anything! I actually went up and laid in bed for a bit debating what to do next. I hate it when I get in those funky moods! Finally, after a little visualization, I got a spark of motivation to head to the gym.

But it was nearly 12 so I had a snack to hold me over for a late lunch –

And end piece of GH Flax Oat Bran

And 4 cranberry pecans. I was also procrastinating leaving my house with these additional snacks

I  ended up having a great workout. My bike ride was so pleasurable once I was going that I took the long way to be more scenic. EVERY time I go out biking I’m always glad I went. Note to self! I spent 30 minutes on the ET with Better Homes and Gardens and then did some pull-ups, dips, jumping lunges, and a set if biceps before heading out.

After my shower I gave myself an at-home pedicure. As much as I would have liked to have my toes done while sitting in a massage chair, I’m saving that money to put towards future purchases.

Then I made this Mediterranean Salad

  • Spinach, dressed in EVOO and fig balsamic vinegar
  • 1.5 cups steamed green beans
  • 1 small carrot, steamed
  • ~6 kalamata olives
  • 1 tbsp capters
  • Avocado (~1/6 of one)
  • ~1/4 cup crumbled feta
  • 1/2 a can of Costco salmon
  • ~7 chopped almonds

It looks like my hair cut lady at the Hair Cuttery isn’t working until 5pm 🙁 What to do!? She did such a great $15 job last time that I want to go to her again, but I don’t want to wait that long or go tomorrow. Maybe I’ll just go at 5.

    The salad looks great. Nothing like a hearty salad for lunch (or dinner, or breakfast!) It actually looks like there’s a chocolate chip in the center lol.

    Whoa, whoa – that comment was not at all intended for Jennifer Barney. I have only gotten 1 free jar in the history of KERF and would never expect to get future jars for free! It was directed towards the Jennifer who comments all the time in response to her grocery comments on the last post. We have a bit of a joking/sarcastic relationship going these days.     Great looking salad! I would wait till 5 to get a hair cut. Just got mine done yesterday ($20 though, plus tip). I feel 10 lbs lighter (which happens when you only get a hair cut 3x a year).

    Wow, your salad looks fantastic! I had a med. lunch as well today. I swear all the veggies, olives, feta and EVOO..yum…I could live off of that combo!
    By the way, awesome recipe with the Kale Chips. I’m super intrigued by them and can’t wait to try them!

    I think that visualisation can be a really powerful tool. I have talked a bit about meditation in one of my posts today. It can work wonders on your mood and motivation 🙂

    Honestly, lying down and just thinking is the best way to organize your thoughts in those situations. If you were fiddling around the house, trying to think of something to do, I bet it would take you a lot longer!

    Just wondering if you’ve seen the Skinny Dip beer by New Belgium? I know you’re a fellow beer lover, and thought you might be as excited about it as me. It has only 114 calories per bottle but supposedly has a full-bodied taste. New Belgium is an excellent brewery, so I’m hoping they’ll be the first to make a light beer that actually tastes good! I bought a six-pack today and I’m looking forward to trying one tonight.

    No more flaunting of that iphone…grrr I’d totally get the phone if the data plan wasn’t so expensive!!!

    heheheh I’m glad you made it to the gym even though you weren’t feeling it. Sometimes the best workouts come from those….and yummy lunches come from ’em too!!!! I heart costco! 🙂

    Too funny, I just posted about two fabulous salads that i’ve had in the last couple of days. I could live on salads! I love them so much! Yours looks great.. i’ll have to try this combo! I love kalamata olives.. they go great with feta cheese in greek salads!

    This actually belongs to an earlier post, but I really need to shower so I’m not going to find out which one…

    I discovered something really cool on my iPhone on my run tonight. I was listening to the iPod and accidentally pushed the microphone button on the headphones and it paused the music! That could come in so handy!

    I’ve had the phone for over a year and just found that out. I thought immediately that I needed to share it with you.

    Kath,
    I just wanted to thank you for your blog, as it’s something I can actually relate to. Because of this new community I am now addicted to, I have started my own blog and hope you don’t mind that I mentioned you…in a good way, I swear.

    Anyway, I just want to warn you about the addictive nature of the iPhone. A writer I work with practically values his more than his kidney. In fact, I’m pretty sure he would give me a kidney before he would give me his iPhone. It’s always beeping or he’s checking the weather in Alaska or the lottery numbers or something, all while e-mailing himself to the computer directly in front of him (just because he can).

    They sound wonderful, but beware the siren song of the apps….

    I laughed when I saw your title beacuse I was just drooling over a mediterrean bread in my newest vegan cookbook and now I’m debating making it but not sure what to pair it with – I’m guessing a soup or salad would be best – off to find mediterranean soups I guess?!

    the bread has olives & sundried tomatoes in it!

    Some GH franchises do shipping – my hometown shop does limited stuff (my gift boxes usually include a loaf of honey wheat, plus a small specialty loaf, 6 cookies, jam, and soup mix) And since today is my birthday – I’m expecting one of these beauts any day from the folks 🙂 YAY! We don’t have any GHs in NH.

    That’s in Herndon VA – worth contacting the local GH to ask anyway….
