Lunch On Kate

Can you believe this is my last week in Salisbury?!

Time is a’flyin!!!!!

Were in the office today preparing for two days of nutrition education tomorrow and Wednesday.

Lucky me, Lynn made a pot of coffee and I had a mug with some skim milk Amy had in the fridge. Perked me up!!

I had a steady build of hunger that peaked at 11:30 when we all broke for lunch.

I brought in Super Bowl leftovers – Kate’s salad that she sent home with me!! It had feta, spinach, tomatoes and croutons and I added 3 of Kelsey’s goat cheese balls and some almonds.

Plus pineapple wedges from the cafeteria of North Ellie! ‘TWas a big, fun salad!

On the side I brought in a day expired pumpkin yogurt…

Thanks for lunch Kate!!!!

    Those looks like such thick and juicy slices of pineapple – wonderful! And while that pumpkin yogurt is all well and good, I”m still waiting to hear what you think of the caramel oikos ๐Ÿ™‚

    I eat expired yogurt all the day, it holds up for weeks afterward. I use my nose as my guide. ๐Ÿ˜€

    Ooooh goat’s cheese, I just had some for my afternoon snack – it’s easily the best cheese out there! Equally, almonds are the best nut – you had a great lunch!

    looove the pineapple in the salad. all i have leftover from the superbowl is a biiiiiig hunk of pudding pie. thinking that might not be such a good choice for lunch… ๐Ÿ˜‰

    I love that pumpkin yogurt, sadly they don’t sell it in CA:( I bet you’ll be glad to be done with the commute, but it sounds like you’ve been doing some really cool work the last few weeks. can’t wait to read about the next rotation!

    I am so happy to know that I am not the only one who will eat expired foods (within reason, of course). If my husband reads that something expired the day before, he would toss it. Because, apparently, the second the day changes to the date of an expiration that product turns into something that will boil your insides and make you sick for a month.

    Really, that’s his thinking.

    I wish we had that pumpkin yogurt in Canada! You guys are so lucky. ๐Ÿ™‚

    funny that you ate an expired pumpkin yogurt- i did too!
    damn seasonal flavors! I buy them in bulk and then dont get to eat all of them.
    well, who says a few days past expiration will hurt anyone? my stonyfield still tasted pretty good ๐Ÿ™‚
