Looks Can Be Deceiving

I got a lot of work done this morning, but when it came time to go to the gym I was so indecicive. I ended up procrastinating around my house for about 30 minutes – just walking around! I finally decided on the gym (biking there) and the second I left it started to sprinkle! I almost turned around but it stopped and I just kept biking and soon enough I was happy as a clam to be outside. But it was a rough start!

I snacked on a few pieces of dried fruit while I was procrastinating to tide my hunger for lunch.

Once home + showered, I was really excited to make crab cakes.

DO NOT TRY THIS AT HOME. They were awful.

I used these ingredients including a can of crab. The big problem was that I used year+ old store-bought bread crumbs. Who lives with a baker and uses store-bought crumbs!? They were stale and affected the whole taste. The cakes were also way too wet and didn’t broil properly.

So I give you: Broiled Stale Crab Salad!

Served over a bed of arugula + spinach dressed in lemon + honey along with sauteed carrot, zucchini, corn and pepper.

And a piece of stale bread!!!!!!!!!!!!! (With butter)

Halfway through I thought “This tastes bad I shouldn’t be eating it.” So I left 1 of the 3 cakes. But I ate everything else.

I am still a little hungry (an hour later) and Matt just got home. We might take an adventure to a fun place!! Guess where!?!

    How disappointing!! Here’s a recipe for crab cakes that is easy and delicious:

    1 can of crab meat, drained
    1/4 cup bread crumbs (or half bread crumbs, half wheat bran)
    1 whole egg
    1 stick of celery, finely diced
    salt + pepper

    Form into four patties. Saute in a pan (sprayed with Pam or a quick splash of EVOO) on med-high heat until nicely browned on both sides.

    (You can use this recipe for salmon cakes as well.)

    I eat them on a bed of greens/salad with a sprinkle of lemon juice (and Frank’s too!!).

    Sorry about the crab cakes!! I always get upset when something I’m eating doesn’t taste well – it feels like a wast! I vote for vino to correct the problem 😉

    oh, and our tried and true recipe uses only 5 saltines crushed per lb. of crab,1 Tbsp mayo, and a little old bay. Yum 🙂

    Sorry to hear about the bad crabs! I have to admit that it looks absolutely lovely 🙂 ! It would probably be worth it to try again when you have up-to-date ingredients.

    Can’t wait to hear about the mystery adventure! Greenway? Kate + Nate’s? Kelsey’s? Haha, I feel so “in-the-know” !

    Oh no! Sorry that crab was bad! I’ve had the same experience with canned crab and canned chicken. I did not enjoy.

    No offense Kath — but I can’t believe you ate any of it if it was that bad! You always make such beautiful food, so I’m sad it was a bummer … I used to feel guilty for throwing food away but now … it’s all about the taste! In fact, I’ve had a tummy-ache all day today and ended up getting Panera chicken soup/baguette combo instead of eating the veggie-loaded beef stew I’d brought in to work today. Sometimes it’s just not worth it!

    Canned crab meat? Yikes. I’m a true Maryland girl and can’t imagine anything but unpasteurized fresh crab meat making a good crab cake. Trust me, I’ve tried.

    From another Marylander…I must say, canned crab makes me cringe! Crab cakes = crabmeat, mayo, and Old Bay. Old Bay also makes a good crab cake seasoning packet.

    For some reason I am thinking the flavor of Progresso bread crumbs, even fresh, combined with pimento, may have been at fault.

    Well now…sorry to hear those didn’t turn out right. Next time, grind up any of your fresh bread in a food processor! Hopefully it’ll turn out better. Have you ever tried salmon croquettes? Try making those one day too. 🙂

    I had a gym pass right after my son was born and never showed up. I prefer exercising at home. I don’t hear you doing it, except for yoga. Any particular reason?

    I don’t have any equipment or videos other than yoga, so I’m not sure what I would do at home? I often walk or run from home, but I go to the gym for the weights and machines.

    Another Marylander here…I would also recommend staying away from the canned crab. Buy fresh crab (lump or jumbo lump) in the refrigerated seafood section of the grocery store.

    You shouldn’t need much filler (breadcrumbs) when you use good quality crab meat. This is how we rate our crab cakes here….more crab & less filler = better crab cake.

    Guys, if I could afford the $19.99/lb lump crab meat I totally would have used it! I just had hoped the $2.99 can would be 75% as good. Guess I will just have to wait for a sale!

    One more Marylander…

    Not everyone here in MD uses lump for their crab cakes (although they are better with it. 😉 ) Here in MD, fresh crab comes in grades, listed by price from least to greatest: Machine-picked claw (used in soups – too salty for anything else. Hand-picked claw – fine for crab dip, Maryland crab soup. Special – some use it for cakes and dip. Backfin – sweeter meat, used in cakes generally. Lump – used in cakes and anywhere you want pieces of crab in the finished dish (like cream of crab soup) Jumbo Lump – for people who want to show off. 😉

    Now, here is something else to consider. Crab cakes need a *little* binder. I use 10 (no more, no less) Ritz crackers per pound of crab meat. Also very important is to allow your crabcakes to REST in the fridge about 30 minutes (or more) before broiling, frying etc. If not, they are too wet and fall apart. (which might be part of your problem here.)

    Crabcakes can be frozen and actually taste perfectly fine. Certainly better to pay for a pound of fresh and freeze leftover pre-broiled crab for another meal than to resort to the caned stuff.

    My husband likes to make “crab salad sandwiches” with the canned stuff . Canned crab and wasabi mayonnaise. Other than that, not too tasty…
