Long Time, No Laugh

My college roommate Meredith came to visit tonight!! She’s from Culpepper, VA and her family now lives in Lexington, so she’s here visiting from Camden, SC were she is Dr. Meredith, the VET!

Here are some hilarious college memories for you –

Upon arrival we took her to the bakery and gave her a tour of the house. She is an avid blog reader and said the house looked very different in person!

Meredith is also one of the best beer drinkers I know, so Matt put her to work taste-testing his collection:

Meredith’s mom is a flight attendant and often travels to Asia and bring back pretty Longchamp purses (i.e. knockoffs) for something like $10 bucks a piece. Mer brought me a new one since my old ones from college are quite dingy. It has a running girl on the front!

We talked and laughed and talked [Karen joined us for dinner too] and when Matt went inside to put together dinner, I brought out an appetizer of GH bread with smoked cheddar on top. This is that fancy smoked cheddar from Feast! and it’s incredible!

Matt’s homemade pizza dough (a 50/50 blend of whole wheat and AP flour) topped with grilled eggplant, shrooms, Philly sauce (!!) and smoked cheddar. So amazingly delicious!

For dessert I brought out some of my aunt’s cookies from the freezer, Hail Merry Macaroons and Flying Squirrel PB for Meredith to try. We had a taste of each for dessert.

We talked and laughed and talked through thunderstorms and rain on the porch. You know you have a friend for life when you can see each other once a year and go back to old times in a flash!

Along those lines, if you live in Camden or Columbia and want to be Meredith’s friend, she would like to be yours 😉 Seriously.

Since I took the afternoon off, I’ve got a massive inbox to clear out before I head to bed!

    Oh my gosh! I am 99% sure I knew Meredith from being a youth enabler at Massenetta Springs in 1998 or 1999. If she is the same person, then I can attest that she would be fun friend for those in SC. Congrats to her for being a vet. I’m glad y’all had a good visit.

    Isn’t it great, realizing that you look better than college! I always thought that those days would be my prime, but I have to admit I take a lot better care of myself now that I’m “older.” I’ve got to get some of that Flying Squirrel PB.

    This pizza dough seems much more complicated than the quick version you guys made a week or so ago (that one was just mix everything together by hand and let sit) – does the easier version turn out as well as the two part recipe? I’m lazy and don’t own a stand mixer so the earlier recipe sounded very appealing to me. 🙂 Now I’m wondering about the differences though…

      Actually this one was a quick version. I just mixed it all up, let it sit for about 6 hours, shaped and baked. The percentages were slightly altered because of less WW flour.

      It is not really a “Replica” but an illegal knockoff of a trademark. I work very closely with trademarks, and counterfit items are a pet peeve of mine. The businesses who manufacture these items do not pay taxes and their employees are not protected. Profits from counterfeiting support other operations including drug trafficking and terrorism. It costs the “true” companies milions of doallars in legal fees. I encourage everyone to seriously think twice about buying or accepting this merchandise, and the social impact it has. It is also actually illegal to be in posession of such merchandise.

There have been some articles published on this subject – including the ones below from Harper’s Bazaar and Time magazine; however, most people are not aware of the impact that results from buying these counterfit items. Please read these articles and consider not supporting these illegal activites in the future.

          I’ll back up both of these women. The book “Deluxe: How Luxury Lost Its Luster” by Dana Thomas explains the seedy side of counterfeiting. After you read how children are treated in some back-alley factories, I am sure you’ll never buy or accept knockoffs again.

    I’m in Columbia (Northeast). What does Meredith like to do? I’m a knitter and a writer and hula hooper. If she is any of those things (or wants to be), I can probably help her out. 🙂 The hula hooping is fun by the way and a great workout.

    I just moved to Columbia about a month ago and can totally relate to the feeling of desperately needing a friend. The city is not so bad, but since I do not work in a traditional office, meeting like-minded people has been a slow process! Best of luck, Meredith!

    Friends like that are what I like to call “staple friends.” It doesn’t matter how long you’ve been apart, or if you don’t always have the time to call, once you get back together, it’s like no time has gone by. I love it! While you were both adorable in College, I agree you have both aged for the better 🙂 I especially like Mer’s hair color now; it goes great with her complexion! Glad you guys had a blast!

      It took me almost 5 years to find friends in Columbia other than ones I already knew. I tried through work, where I lived, etc. What finally worked for me was finding a group that did what I liked to do. (Writing.) Through them I learned how to knit and hula hoop and I’ve found ton of friends that way.

      But seriously, there should be a Columbia reader meet up or something.

    Hi Kath,
    Totally love getting together with old friends, what fun you must have had.
    I love Meredith’s top! Where, oh where did she get it?
    AND I have been doing Calorie King for 3 days and I am sticking to it! I love it (so far). I can’t believe that at the end of the day I have some extra calories to still eat? Is that true? Should I really eat all the goal calories?
    Anyway, I have started with the oatmeal and nut butters in the morning (thanks to you) and love it.

      It’s been so long since I’ve been on calorie king that I don’t remember much! I say now that Intuitive Eating rules – so if you’re not hungry, don’t eat.
