Limeade

It may be back to winter temps, but there was a taste of summer here in household KERF today

Fresh veggie juice made with LIME!! Man, it threw lemon outta the park ; )

In my juice:

  • Old apple not worthy of mouth crunching
  • 1/2 a head of celery
  • 1/2 a cucumber
  • 2 carrots
  • 1 whole entire lime

On the side…

Leftover coconuty millet headed up with some pecans and topped with a Grandmother-inspired soft boiled egg! It was quite delicious – runny yolk and all. For the soft boil, I just boiled an egg for about 4 minutes and then cracked it open and scraped out the insides into my bowl.

This lunch was fab, but didn’t leave me very full. I see a snack in my future!

I biked to Body Pump and back this morning. I’m feeling stroooong! Matt is running 1,000 errands for the bizness and I’m holding down the fort.

    I LOooooooVVVEE lime too! I drink lime and lemon essential oils in my water daily, so delish! Glad you are feelin’ strong in BP- it is such a great feeling, knowing you can lift and do more. Go YOU 🙂

    I’d say that’s an appropriate linen 😉
    Loving the lunch combo! I would never think to put an egg on millet! I usually think inside the box.

    PS. I hate these cold weather temps! It’s only 63 in NC today and tomorrow is going to be 53! Yikes! Better pull out the winter sweaters!

    I love a good soft boiled egg. I would recommend making breakfast nachos sometime. Or even savory oats- nachos!

    I love hard-boiled eggs, so I need to try some soft-boiled! Looks like they’d be great over potatoes or even a bagel maybe. Happy Friday!

    Wow, that sounds like a delicious juice! Did you make it in a juicer or a blender? I don’t have a juicer but I’m contemplating it as my next gadget purchase!

        I’ve never juiced before, can you do it in a blender?

        I don’t really “get” it though…it takes out all the fiber and good stuff from the vegetables – so what are the benefits?

    Afternoon Kath! Do you think it’s the volume of the oats or the protein and fats in the nut butter topping that makes oatmeal for breakfast so filling? Oatmeal with almond butter & preserves keeps me full for hours, unlike any other breakfast I’ve tried! With the changing temps (it’ll reach 90 degrees in Austin tomorrow!) it just isn’t as appealing this time of year so I’m hoping to find another cool, satisfying breakfast that keeps my hunger at bay all morning! Any suggestions?

      I think it’s a combo of volume, soluble fiber and macronutrients in the bowl! That’s why overnight oats are perfect for summatime 🙂

    Cute tea towels! I love lime more than lemon as well, but lemon and lemon juice is more available when I go out but I will take lime when I can get it.

    I often eat a soft bolied egg on toast…in my mind it seems healthier than frying

    up an egg (plus I think it even tastes better!)

    By “whole entire lime”, do you mean WHOLE including the peel?

    I love that strong feeling after a good workout. This morning I went from work (I work at my gym) to the elliptical and felt ti-red. So after 30 minutes of sweaty cardio I decided to jaunt home for lunch before doing my weight circuits. The bar I brought with me to munch on before provided little to no energy. You gotta do what you gotta do.

    The lime drink looks awesome. LOVE The linens!! Soooo pretty. And the wheatgrass in the pic. All these little staging details…I read blogs with new photography eyes the past few months…it’s like 2 years of blogging and then BAM a lightbulb went off.

    This may be slightly random, but I just had my first tastes of Great Harvest bread! Oh my word is that bread amazing! I bought two loaves (and tried countless slices) and now have to figure out how to pack them in my suitcase to take home!
