Light Supper For 2

Chem lab went really well again today!! Part of the reason I despise labs is the unorganization of not really knowing the procedure and chemicals flying around and trying to find beakers and all that. But this is the first lab EVER that is super organized! Perhaps because it’s also the highest level chem I’ve ever taken. We did Recrystalization followed by melting point analysis, and except for a long line waiting for the melting machine (techincal, huh 😉 ), it was pretty painless. AND I found out that I don’t have to go to lab next week because it’s a molecular modeling lab that we can do on our own time this week. Sweeet! Anytime I can eat lunch at home and not be stuck on campus is great.

I came home around 4:30 quite hungry for a filling snack. This was one of those days when I thought: bar during the commute or huge bowl full of something when I get home? The answer> was obvious – I wanted a filling, crunchy, volumnious yogurt mixture!

  • About 2/3 a cup of remaining greek yogurt
  • About 1/2 a cup H2H
  • About 1/3 a cup TJ’s High Fiber Worms
  • Spoonful raspberry jam

But it’s too bad that I SPOILED MY DINNER with fiber and protein, because it took a long time to work up some hunger (even with studying involved!). We ended up eating around 7:30, hunger or no hunger – the husband was ready to eat! It would have tasted better with a bigger appetite. We are working on eating some of our freezer items, so tonight was centered around some frozen ravioli.

Putney Pasta was a new brand to try, and I have to say I didn’t like it nearly as much as Rising Moon Brand, which was more tender and a little lighter nutritionally. But maybe I just didn’t like it because it was ricotta based, and I really don’t like ricotta that much. We have a butternut-maple one to try too, so I’ll cross my fingers for that one. With some parm and S+P:

After dinner the husband and I finished off Jaclyn’s yummy Jacques Torres chocolates – just little nibbles left! Thanks again for the gift Jaclyn!

I’m hoping to be in bed by 8:30 tonight so I can catch up a little from last night and get up tomorrow for another gym trip.

    Kath!

    I’ve tried this new greek yogurt. It’s called “Skyir” or somthing like that. . .It’s from Iceland. . . and I’m in love! It’s very think and rich tasting, with no fat. Tons of protein. Comes with it’s own little spoon. AND has a wonderful flavor. Kind of cheesy like. You have to try it! It’s the most delicious of the greek yogurts I’ve tried. =]

    The only down side. . .I think it’s pretty expensive. =(

    Hello, Kath! I just made a huge batch (about 8 cups worth) of wheat berries for the first time. I LOVE them! I’m not sure how to store them, or if I should just attempt to eat them all this week? I came to you because you are more of a wheat berry expert than anyone else I could think of! Thanks!:)

    Okay, okay.

    After a little googling I have some revisions to my first post. What I ate was actually called Skyr [The brand says Skyr.is] And it’s not yogurt, it’s cheese! Haha, no wonder. Weird to think I ate 6 ounces of cheese, haha! Anyway, it’s amazing! Tangy and rich. I’m totally raving. 😀

    How do you force yourself to go to bed so early? I need to start aiming for that time because for the next two weeks I have to be at my internship at 5am. That means waking up around 3…I don’t know how this is going to work, I’m so used to going to bed around 11 or 12 every night that 9 or earlier seems impossible.

    Hey Kath, I just posted a review of the Earth Fare peanut butter you sent me, thanks again! It’s darn good in oatmeal!

    SC: after seeing those commercials about HFCS, I looked into it more. Check out the Wikipedia entry for HFCS. It points to a lot of scientific studies and references from peer-reviewed journals. Basically, HFCS contains 55% fructose and 45% glucose, while regular table sugar contains 50% fructose and 50% glucose. The difference is almost negligible and no real discernible difference on the effect of weight/diabetes was found. The main reason HFCS takes a lot of heat is because it’s so common in America due to the high tariffs on table sugar.

    RD2Be, trust me – a few days of waking up at 3 and you’ll WANT to go to bed early 🙂 I’ve been waking up early for years and now, like clockwork, I’m tired at 9 every night. You just have to force yourself for the first few nights.

    I had the same question about how long prepared wheatberries would last lol… I made my first small batch last night. I am thinking about making a wheat berry salad type thing. Not quite sure what I want to do with them, but I have been wanting to try them!

    I haven’t made kale chips in awhile. I really love them. Thanks for reminding me!

    I forgot to mention, I just bought TJ’s greek yogurt for the first time yesterday…AWESOME! It’s so much more nutritious than that Dannon light’n’fit yogurt I’ve been buying. Very low in carbs and super high in protein. Plus it’s extra creamy and pricewise even Walmart can’t beat the price of TJ’s brand greek yogurt. I’m now an addict.

    hey kath today i bought your vanilla bean paste that you got from williams sonoma. i remember you blogging about it a while ago. do you have any idea about the nutritional content in that? i’m excited to try it in oatmeal one day~

    I am also trying to eat the foods that we already have. Our freezer, pantry and fridge are all overflowing!

    I’ve heard/seen that brand, but not in any of my grocery stores. You bet I’ll try it as soon as I see it in real life!

    Store them in the fridge in a big tupperware and I try to use them by 7-10 days, although I’ve never had them go bad on me. But they are usually gone by then 🙂

    I agree with BethT – if you get up early you’ll be sleep by 9! It’s all about getting your body clock to adjust. I think there are some tips on the FAQ page for switching to early morning exercise. 3am would be quite early though! Maybe you could do something on your lunch break?

    I have no idea since the jar doesn’t have it on there, but there is sugar in it. But since sugar is about 15 kcal per tsp, it can’t be more than that. I’d guess 5-10 per tsp.

    I agree. It’s so hard to find a satisfying snack that doesn’t fill me up and spoil dinner!
