Life In A Box

Lots and lots and lots of packing. But we made GREAT progress!!! 2 weeks to go!

Big Styrofoam boxes that deliver yogurt to food bloggers make excellent fragile frame containers!

Cooling – they’re for our belated Mother’s Day picnic tomorrow (and you can still get the mix along with cookies + pancakes here! It’s whole wheat but also made with butter and eggs for good flava.)

After a looooooong day of sweating, Matt declared we have some Barleywine he’s had for ages.

Barleywine is kind of like a high-alcohol beer that’s sweet and malty. It’s much more beer-y than wine-y.

I never got that hungry for dinner – lunch was late and big. But luckily we had something easy and light planned.

Gazpacho!!

We used our classic recipe except we left out the corn/chickpeas and used different types of tomatoes. I never order gazpacho in public because it always has onions, but it’s awesome made from scratch!

Put everything in blender and chill.

    I used to eat TCBY’s white chocolate mousse at LEAST once a week one summer when I lived nearby one. It is SO good!

    Aaaaah, frozen yogurt envy strikes again! Pistachio and coffee are two of my favourite dessert flavours in the world…. at least I can live vicariously through you 😀

    I love to reuse boxes like that. But now that we move around so much we have totes.

    And gazpacho is one thing I never really got into even when in Spain…cold soup is not my thing. But it always looks refreshing.

    Random thought…You know, it surprises me you never have oats for dinner. I will forgo the rice or grain in my dinner just so I can finish up with some cinnamon oats:)

    Gazpacho…Perfect! I love it…so tasty and refreshing! Nice ending to the day too! Frozen yogurt will always have a special place in my heart. Sleep well…I am heading in that direction now!

    I don’t know if I’ve ever seen a whole wheat box brownie mix! That’s awesome!! Maybe Pillbsury wil catch on 🙂 You guys are champs for not turning the air conditioning on in this heat. There’s no way I could handle it but props to you!

    I too am moving to VA in a few weeks. Thankfully we are having people pack us to move the some 1500 miles from Texas! The horrible part is the unpacking and cluttered/disorganized part that will ensue!

    I might actually eat at TCBY if it looked like that! They have sad looking fruits and just plain crazy-sugar candy. I miss Red Mango! FRESH fruit and nuts. Ahh…sounds great right now!

    Packing is hard work. Mmm, gazpacho and froyo! Sounds like the perfect dinner for a hot evening after a hard day’s work. 😀

    Brownies look awesome! I’ve heard many good things about Kodiak Cake products. I’m definitely trying that Gazpacho today! It’s so hot, we definitely need something refreshing…

    Your gazpacho looks so much thicker and nicer than ones I’ve ever seen; the ones I’ve seen were so thin and watery looking, they totally put me off :s but now I want some again!

    My favorite gazpacho EVER was in the cafeteria of the Prado in Madrid!! (Not sure if it really was that awesome or the fact that I was finally there!!). Will be making some tomorrow to include locally grown zucchinis, tomatoes, and such.

    Packing is intensely tiring!!

    I helped my sister move last year (she was on the third floor of an apartment,) and I felt so sore the following days. It’s cardio and strength rolled into one. :mrgreen:

    We’ve had a VERY similar weekend only I have to keep all my decor up as the realtor is coming TODAY to take pictures for our listing. My house looked like a BOMB went off the majority of the weekend but now it looks very similar to yours + decor 😉
