lentils + leftovers

Hangin’ in there!!

We said our farewells to Jason today. Now it’s just the two of us here, running the show!!

BIKE is fixed. The guy at the bike shop fixed it in 5 minutes. I think Matt was just too tired to fix tires at 9pm. I now have 2 spare tubes and hopefully it won’t ever happen again!!!

I had a few pieces of savannah bar crumble for snacks and finally got to sit down to eat at 1:30.

Prepared salad + leftovers to the rescue! Both are key components to quick packed lunches. Make a protein or grain-based salad (like lentils, quinoa, millet), add some veggies and a dressing. Then you can morph it as the week goes on.

Today I took some leftover roasted veggies and piled on some lentil salad and topped all of that with some veggies from our dinner Monday night and hummus

More savannah bar for dessert! Today’s flavor is Apple Cinnamon Chip!

Matt was on the computer all day doing scheduling so I’m just sitting down to blog. My feet are tired!! We’ve also got a 6:30pm phone meeting to talk about bookkeeping, so it’s probably going to be a long night.

Wish I could feed you all a slice of bread!!

    Glad it’s going well, even though it’s tiring. Once you all get into the groove of everything, you’ll have more time to rest. And at least you gave yourselves one full day off a week.

    That bread looks freaking fantastically amazing and delicious and I’m jealous. A friend of mine is going to be Cville for a photography conference with her class this weekend. I’m trying to get her to swing by and bring me back some bread and granola!!! (Because the Great Harvest we have in Greensboro just doesn’t have as much bread variety as you do.)

    That popeye bread sounds amazing, I need to call my local Great Harvest and ask if they ever make this ASAP.

    Maybe you have already done this but it would be great to see the bread making process on your blog sometime, or muffin making, or cookie making, or whatever!! I’m fascinated how places like bakeries make SO much product every day.

    That is the best best way to make/plan lunches — I make a HUGE batch of quinoa and lentils every few days and just throw those together with some homemade dressing and a salad!

    Lentils are quickly beating out chickpeas for my favorite bean. I’ve been eating lentils with everything and in everyway imaginable! Lentil salad, lentil soup, lentil loaf, and lentil dip. I think I’m addicted! 😛
    Oh and that bread looks fabulous! I definitely think you should have a giveaway of Great Harvest Bread on your blog sometime soon. Especially for us non-local readers! 🙂

    Hey Kath! I am dying to know what savannah bars are! Or at least based on, since I know you may not be alble to devulge the exact recipe. 🙂
    I’ve been reading your blog for a year or so now and I must say you sparked my interest in both becoming an RD AND bakery owner!

        Do you bake them yourselves? Or are they “sent/shipped”? Do you get fresh stuff daily?

        I was also curious about bread baked that doesn’t sell – how long do you keep it for or for reduced sale?…home or to hungry co-workers? 😉

    your lentil lunch looks like my leftover lentil lunch posted in my WIAW. lentils have become one of my favorites since they a) go with everything and b) have so much protein.

    Oh gosh do I love Popeye Bread! Our GH has it only during the weekdays and we usually only have time to go on Saturdays but I scored it once. I need to get back there on Tuesday so I can buy a bunch and freeze it!

    I’ve been making these bean+grain salads a lot lately too for my work lunches. They are like the summer equivalent of the various rice+beans I make in fall and winter! This week is quinoa and black beans with veggies and lime vinaigrette!

    I can just feel your exhaustion, Kath. Things will begin to reach a new calmer normal for you pretty soon…hang in there.

    I know it’s hard to think re. adding one more to-do to your list, but I betcha a yoga session, or ven a 30 minute solo session, will do a world of good for you. When things are especially hectic and I can’t even think re. downward dogs, is when yoga benefits me most.

    In any event, I hope you get some quality zzz’s tonight!

    so do you switch the fruit on the savannah bars daily? we have the same fruit on them everyday (unless of course we run out of something). Apple CC sounds yum! We make an apple CC bread on Saturday 🙂

    Changing tires on bikes isn’t as scary as it seems!! I used to leave it up to my Dad (crazy exercise addict) but once he showed me it was really awesome that I could fix punctures myself 🙂

    Mmmm, that Popeye bread looks so good! I want to try making my own bread, but I can’t find any good 100% whole wheat recipes… I don’t want to bake some, and then feel guilty about eating it… I want to bake some, and feel good about feeding my body good wholesome food!

    I love cooking ahead for take-along meals. I am quickly becoming obsessed with quinoa…always have loved lentils. How long do you think each would keep in the fridge without other things mixed in? I am thinking 3-4 days?

    I think that’s going to be the hard part for you is sitting down to eat a normal meal during the day, but great idea with the leftover veggies and lentils – very healthy and yummy.

    Glad everything is going OK for you and the shop – so exciting!
