Lax, And I Don’t Mean Lacrosse

Or LA’s Airport!

Hey friends!

Today was such a lax day. I read on the couch for hours. I must get to work tomorrow!! I have writing to do, presentations for the Summit to plan, Summit stuff to follow up with, calls to make, letters to write!

Afternoon snack.

It’s good. But not blow-your-mind-cookie-dough good. I think the PB chip was better. Still top 5 flavors though!

I didn’t really like the first bite, but by the end I was sold. The chocolate takes a while to develop!

And put them into matching containers. Part of a set from my OpenSky shop [currently not showing up!?]. We were going to hang the cool magnetic rack but since this rack was already built into the door, we decided not to take up more space. I’m definitely one to love matching!

Tonight was a wine night. It just went well with the ambiance.

Matt’s friend Dallas came over for dinner on his last night as a Cville resident 🙁

We made local grass-fed beef burgers on the grill with homemade bread buns, heirloom tomatoes, avocado and lots of fresh local veggies: okra + kale chips

I ate 3/4 and gave the rest to Matt. Had no trouble with my veggies though 😉

Fun relaxing day at home. Just a few days till I’m in the Big Apple + the Windy City!

    I love alphabetizing my spices. It makes me really happy. I don’t have matching jars, though, you are in a class all your own!

    I just discovered grilled okra this summer and wow it is amazing. Although mine is definitely more charred than yours- often not on purpose! I have to say, though, it tastes really good when it is BLACKENED. At least I think so 😀

    After all the hustle and bustle with your recent move, I think a relaxing afternoon reading was well deserved. I’m dying to try those new Lara Bar flavors, I’m just waiting for them to start distributing them more widely to various grocers.

    Those homemade buns look like they came in handy for your delicious dinner. I’m always impressed at how you fill up half your plate with veggies.

    hey kath,
    have you ever tried balance bars? they have a really good cookie dough flavor. i also like them because they have about 3x as much protein as larabars for the same # of calories.

    also — holy okra! i’m a born and bred new englander who had never tried okra (i just never thought about it), but i’m overseas for the summer and saw it in the farmers market when you did your roasted okra post. i’m a convert!!! delicious!!! i will definitely be eating this overlooked veggie from now on —

    When you roast your veggies going back to Sat night do you use the Garlic Gold Oil or the nuggets? I wanted to order some from your Oken Sky but wanted to get the right thing you were using all of the time.

    Hi Kath – I hope you enjoy some good eats in the Windy City. Have you been to a Trader Joe’s store yet? There are quite a few in and around town. I get my Larabars from them and a ton of fun, healthy snacks. Right now I’m addicted to their Super-Seeded Tortilla Chips with Flax, Chia and Hemp seeds. Have a good time!

    My boss – a Southerner – recently got me hooked on okra. My new favorite way to eat it is to toss it with olive oil, garlic salt, and pepper, then grill it til its almost charred, then squeeze lemon all over. Sometimes I also mix up some greek yog and lemon and dill and dip em in it!

    Hey, I love the idea of neat matching containers for spices. But it just occurred to me that if I do that, the “dates” will be gone. Do you ever think about the “expiration” (more like “best by”) dates on herb and spice containers? Replace them after a certain point? Just wondering!
