Kath Is Still Eating

I’ve had such fun lunch opportunities during my internship!

Today was the monthly lunch club and we had a beautiful spread put on by one of the health educators here!

Sweet Potato Quesadillas! With all the fixins.

She grated the sweet potatoes and cooked them in the crock pot. I dont’ have the recipe, but it was tasty!! Cumin, cinnamon? Perfect, creative filling for quesadillas!

I filled a TJ’s whole wheat torilla with sweet potato, some cheese, avocado, cilantro and a dollop of sour cream. So good!!!

We also got to try these special fruits – Pepinas. They were like a cross between cucumber and melon. I have to say, it wasn’t the best fruit I’ve ever tried, but I always like trying new things

I also made a side salad with mixed greens, avocado and lime. Gotta get in the greens!

Annnnnnd more salad. Mixed greens are like air! I put on a tad bit more sweet potato and some homemade applesauce! Seems like a lot of food for lunch today, but just consider this 1 quesadilla and 1 big salad with a side of applesauce instead of all the smaller installments 🙂

I finished lunch with a Dove Promise 🙂

Some of the staff here were very interested in hearing about KERF so I spent the lunch talking, not eating. So by the time I went back for more salad, almost everyone else was back to work!

    what a fun and unique lunch! did people have good things to say about your blog? I feel like people who never read food blogs (and don’t know they exist) don’t really “get it”. I tend to call mine a recipe blog, because that seems to make more sense to people (although mine actually is a recipe blog haha)

    That looks like a delicious quesadilla filling, but i bet it would be even better in enchiladas with some black beans!

    Wow, the sweet potato shreds looks like an awesome idea! I’m always looking for slow cooker options and now that my boyfriend is newly in love with sweet potatoes this looks like a great meal for us!

    Oh wow… sweet potato quesadillas..YUM!!! I’d kill to know how she made the sweet potatoes. Think you could get the recipe out of her? I love the combo of cilantro and avocado… adding a sweet potato is genius!

    I’ve made sweet potato enchiladas before, and it was delicious! I bet a sweet potato quesadilla would be awesome too 🙂

    WOW Kath, this is seriously one of the most delicious lunches I have seen you eat lately. I definitely need to try grating sweet potato! I wonder if it would be good with other grated veggies too like zucchini!

    The grated sweet potato looks very similar to when my parents make pulled pork – I would love to try that in a quesadilla!!

    I’m loving the avocado too, it’s in my top 3 favorite foods. 😀

    Mmm…love the sound of the quesadillas! I love grated sweet potato. I use it to make crust for vegetable pies, because it adds just the right hit of sweetness. Love it! 😀 And it’s perfect with a sharp cheddar cheese.

    I’ve got about four dinner ideas in my head, and this sweet potato quesadilla thing is one of them. The mayhem! I think I just need to toss them all in a hat or something and pick one out. *Sigh*

    Those quesadillas look interesting! I would never have thought to make them like that. I can’t remember if I’ve ever had a pepita, but I have tried a bunch of different fruits. Aside from the mango, I haven’t found anything that’s like the good ol’ apples and oranges! (And strawberries, and kiwis, and bananas, and pineapple … I like fruit, what can I say?)

    Like just about everyone else has said, what a great way to use sweet potatoes! I would have never thought of it. Unfortunately, I don’t have a crock pot. Hmmm. I think I’ll have to look up some recipes for this and see if I can do it without one. Your lunch looks fantastic!
