LOVING the new porch floor!!!!! I’m not allowed to walk on it yet, but no one said I couldn’t put some oatmeal down

I tried to make today’s whipped banana oatmeal as ‘nogged up as I could. Meaning I added lots of nutmeg, cinnamon and allspice. I meant to purchase some eggnog at the store this week but forgot! This was pretty darn good though. I’ve noticed that chia seeds actually lead to a fluffier oatmeal rather than creamier. If you like your oats reallllllly creamy, leave out the chias. If you like it fluffier, add ‘em!

On top of my whipped banana, I added some Great Harvest Cappuccino Chip Muffin. HOLY good!! Those black specks are coffee grounds, and it tastes just like capp. Chia charger rounded out the bowl.

Cup of hazelnut tea! I like this almost as much as the chestnut. It stands up to a cup of coffee.

    That bowl is so elegant looking. I definitely prefer fluffy oats, so I always always add an egg white. Makes such a big difference.

      I came here to say that I made these this morning, but whipped an egg together with the banana mush and whipped both in at the same time. Delicious, fluffy, and extra protein!

          Thank you so much! Any advice on how to add the egg to steel cut oats using the overnight method? I just put some in a bowl in the morning and heat them up in the microwave. Would I put the egg white in before I microwave it in the morning? I usually only cook it for about 1 minute at most, but would that be long enough for the egg? Thank you!!!

            I’ve never made steel cut oats using the overnight method. If it’s food-safe (don’t know?), I would mix in the egg the night before. The trick I use is first mixing the oats with the egg ONLY, then adding milk/water. Otherwise the egg gets clumpy and you get egg puffs. I’m not sure if 1 min. is enough, but 2 min. should be.

    I made your whipped oats + cottage cheese this morning for the first time and LOVED them! I just added cinnamon and peanut butter, but I will have to make them more festive next time 😉

    I can only imagine how yummy that oatmeal is…coffee granules in the muffin…how great is that! I love it when coffee icecream has the real coffee granules in it too! Gotta love your tea towel…Jingle on Y’All! Hard to imagine Christmas is less than two weeks away…southern ontario is going backwards in seasons…mild, dark and rainy today…your ‘jolly’ post has ‘perked’ me up! lol

    Oh – the floor is sooo pretty- I would eat off of it, too! So great to see how the porch has come along so quickly!
    The eggnog-spiced oatmeal SOUNDS good, but I’m so picky about nutmeg. I find that if I put even the slightest bit too much, it completely overpowers everything and ruins the flavor. (I have been adding Earth Balance Soy eggnog to my overnight oats, though!)

    Also – I find the same thing with the oats! Fluffy fluffy with the chias in there!

    I haven’t tried chia seeds, so can’t say anything about of my oatmeal. But It is a rainy yucky day out there and my arthritis is getting into my bones, literally, and I have taken 8 Ibuprofen since 6:00am, it’s now 10:10 am, will probably get Tylenol for Arthritis later today, I just need to be able to WALK this morning. Have a lot of errands to run and I work from 5-11 on my feet!

    So I’ve been really good about eating breakfast lately thanks to your oatmeal inspiration. Last night, I put a cup of steel cut oats in the crock pot with 3 c water, 1 c sunflower milk, some currants, coconut, cinnamon, and nutmeg. They were ready when I woke up! I added a banana, chia seeds, flax meal, and frozen raspberries and it came out really good. I’m excited to keep experimenting with the crock pot. Do you have a crock pot, kath? Do you ever use it for your oatmeal? I’m looking for more tips on crock pot oats!!!

      I haven’t really done crockpot oats because I would rather dirty a little saute pot and wait 5 minutes for cooking than haul my crockpot from the basement and have to clean it after. If I were going to do oats for a crowd though, that’s what I’d do!

        ah yeah. my crockpot made it’s winter debut this week and isn’t huge, so it might end up living on my counter for much of the winter. I kinda wish I had a crowd to eat oatmeal with every morning!

      Google “Lion Head Soup Bowl” and you should find plenty of options for that type of bowl at different sizes, colors, and price ranges. Also, I’m pretty sure places like Sur La Table have them–I think Pier I and Crate and Barrel used to, but I don’t know now (hard to see the lion head knobs in this post, but I’m pretty sure that’s what they are.) Easy-to-find classic design.

    I cant wait to get to the states for xmas and have some EGGNOG!!!! I’m pretty sure I could make my millions importing it here (how can they not have eggnog?!), but it might be too seasonal a career… :). Massively appetising photos Kath – I’m dead jealous of your breakfast!

      You can make your own eggnog, tons of recipes out there. I am making the one from The Happy Herbivore, Lindsay has one for vegan eggnog (she is vegan so no eggs) on her home page.

    Love the floors! Aren’t home projects the best? We just finished a laundry room makeover (previously our washer/dryer were in the garage – we built an extension off the kitchen to move them indoors!) and I am loving it each and every day!!

    are the coffee grounds instant coffee, used coffee grounds, or freshly ground beans? haha im trying to imagine how they were made without being bitter and grainy. at first i read it as they were grounds in the chia charger, but then i realized it was the muffin that had them

      I was hesitant when I hear that too, but they are so finely ground (from the mixer?) that they aren’t bitter or grainy at all. The muffin’s sweetness helps balanced them out!
