Husband Hero

Yee-haw! Rebecca and I finished our video project on caffeine. It’s cute – nothing fancy! But we worked hard into the evening and hit quite a snag when the videos uploaded as .MOV files and Windows Movie Maker wouldn’t accept them! We ended up using the software that came with my Kodak camera, but it didn’t let us do much. You’ll be able to see the video the week that it is due!

We were so frustrated with technology that Matt poured us a little of his homemade pumpkin ale –

IMG_6651 (640x427)

It was pretty good, but a tad sour and lacked carbonation. So we then split a Cottonwood Pumpkin Ale 3 ways:

IMG_6652 (640x427)

Ahhhhhhhhhhhh.

My hero of a husband cooked dinner tonight while I worked again.

IMG_6654 (640x427)

On the menu:

Spaghetti Squash Spaghetti

IMG_6667 (640x427)

First he roasted a spaghetti squash (click here for the video!!!) and then sauteed some zucchini and green peppers

IMG_6655 (640x427)

And he made a homemade sauce with:

  • A can of crushed tomatoes (28 oz)
  • A can of diced tomatoes (14 oz)
  • A can of tomato paste (6 oz)

Plus

  • Garlic (3 cloves)
  • Lots of sherry (~1.5 oz?)
  • Herbs like oregano
  • Red pepper flakes to taste

He simmered it down until it was nice and thick. Then added more sherry. We love our sherried tomato sauces!

Hello hungry!

IMG_6662 (640x427)

I had some Black Box Wine with dinner – tried out the Sauv Blanc. I so wish this had been a red wine instead of white 🙁 It’s past the season for white. It was just OK. Y’all know I like boxed wine, so I don’t have anything again the box, but the wine itself just wasn’t strong enough for me. I prefer chardonnays and of course, reds.

IMG_6658 (640x427)

Love my new glasses Larbs + Matt!

After dinner we watched The Office and 30 Rock. Love those shows!! Turns out our DVR missed an Office!!!! When we were in Montana. I assumed that there hadn’t been an episode that week, but we saw the ending on the beginning of the 30 Rock! Gotta check HuLu.

Tomorrow we’re celebrating my birthday – I’m turning 26 again 😉 – with our friends in a mid-day brewery outing! Better get my beauty rest. Too bad it’s going to rain. Bummer.

Have a wonderful perfect fall weekend!

    Gosh that dinner looks AMAZING!

Did you hear Hulu is going to start charging a fee for their videos?? It is the saddest thing ever. 🙁 I watch all of my shows on their because I don’t have a TV at school… such a sad day for us Hulu users. 🙁

    Stacy,

I didn’t give more specific instructions because it’s really just a “put everything in the pot and simmer” recipe 🙂 The only thing you might want to do first is brown the garlic in some oil, then dump on the maters, dump in the seasonings and simmer on low until it thickens up.

    Thanks for asking!

I think I’ll have to try the spaghetti squash recipe again. I used to eat it a lot and I think I overdosed. Plus, it’s really good in its own right, but it is really not the same (other than the shape) as actual pasta. I think I have to think of it as its own good thing.
    Enjoy your weekend!

I can see what you mean about it being past white wine season, however, I’m completely enamored by the Sauvignon Blanc’s from New Zealand. They are some of the best white wines I’ve ever had and definitely converted me to a white wine drinker (I’ve always preferred red).

I haven’t tried the Black Box brand yet but maybe I’ll give it a try to see how it compares.

The Highfield Estate Sauvignon Blanc is my current favourite white wine, in case you feel like trying it sometime.

That husband of yours is definitely a great catch! My husband will cook, but could never dream of making something out of (gasp!) VEGETABLES! 🙂

I had the Black Box Sauv Blanc also and didn’t care for it. Too light or something. Anyway, we ended up tossing it out after it expired from sitting so long.

I am also a huge fan of boxed wine and I’m so grateful that finally some very good wines are becoming available in a box. I don’t drink often, so buying bottles was always out of the question because I would end up wasting them.
