Hot Potato, Cold Potato

Delicious lunch on the horizon! “Everything in a bowl” salads are my favorite types of lunches, but I’m not always in the mood for them as much anymore. But today I was! I am always thankful when I am : )

I piled baby spinach (our garden greens are all gone – sadness) with yellow tomato, leftover dilled potatoes, sharp white cheddar, honey + olive oil, applewood smoked salt and a big ole No Bull Burger. Loved the cold potatoes on top!

I went to Pump this morning and got my burn on. I actually got a cramp in my jaw/neck/tongue during the shoulder track. It was very strange and not very comfortable!! I think I was tensing my jaw too much? No fun, but the rest of class was.

    Leftovers put together in a salad is such a great combo! Salads are my go-to lunch in this heat!

    “Everything in a bowl” has pretty much summed up about 90% of my meals lately!! That’s strange that you got a cramp in your jaw. I teach RPM and when I look at my participants, sometimes they look super serious. Maybe you just had your ‘I mean business’ face on. Try an enormous smile next time! 😉

    I think I’m going to throw together a batch of those dilled potatoes for dinner tonight. I have a ton from my CSA to use up!! Your lunch looks delish, as always. 🙂

    Never thought to put a vegetarian burger on top of a salad – genius! I’ve been struggling with getting enough carb and protein with the massive amounts of veggies I eat.

    Ugh I’ve had one of those cramps before- it used to happen if I turned my head too fast. The tongue sensation is the weirdest ever…

    Thanks for linking to No Bull! After reading about them so much on your blog, I’ve been wanting to try one…and just went to the site to discover they have them at Whole Foods in DC! I’m literally 0.5 mile from a Whole Foods that has some as I type this.

    Is it ok to ask a completely unrelated question? I was wondering what your RD opinion is on the kombucha drinks? I love them, so I’ll probably drink one now and again just for the taste regardless, but every time I shuck out $3.50 for one I wonder if there is any validity to their nutritional claims. Thanks!

      I didn’t see any .org or scientific studies done to pinpoint its benefits, (this one found no clinical benefits, but that doesn’t mean there aren’t any: http://www.ncbi.nlm.nih.gov/pubmed/12808367) but I think like other fermented foods that it’s likely good for you (probiotics = good for gut). Especially if you’re consuming a commercially available one that is made safely. I also really like them and have them on occasion (not so much with pregnancy…at the advice of my doctor…although I don’t totally buy it, but it’s easy to pass on for now).
