HOT!

I dined al fresco today and it’s mighty hot in my sweater! Guess I’m in for a shock when I get to Chicago tomorrow afternoon. I believe there are snow showers in the forecast (which better stay snow and not turn to rain!)

I got some quality studying in this morning at the library. It really is such a great place to study. Who wouldda though?

Breakfast held me over beautifully until I arrived at EarthFare for my Thursday lunch out. I thought about bringing my lunch today but decided I haven’t had much lunch veggies this week and a salad was just what I was craving. My classmate Lauri joined me for some fun conversion.

  • Mixed greens
  • Spinach
  • Zucchini
  • Squash
  • Broccoli
  • Cabbage
  • Sprouts
  • Garbanzos
  • Carrots
  • Salmon (the best!)
  • Pineapple
  • Butternut-Walnut Salad (2 tbsp?)
  • Sweet potoato (2-3 tbsp?)
  • Soy nuts
  • Capers (!!)
  • A few giant beans
  • A few snow peas

I also had a hot tea on the side.

Thanks so much for the great discussion this morning. In its honor, I am not going back inside to see if there are any cookie samples and am planning to finish my Coconut Chai tea instead 🙂 (I believe it’s Gypsy brand and its amazing).

    The salad looks great! I have been trying and trying to find that tea but no place around here has it. I love coconut. 🙁 I can’t even find coconut larabars. Lame-o!

    I always LOVE your EarthFare salads!!! :] I’m so curious about the “best ever” Salmon hehehe…

    The giant beans are butter beans right??… I was gonna buy some the other day but didn’t know if I’d like them or not.. haha…

    Try their Chocolate Chai tea, its really good. Have a great time in Chicago, it’s home to one of my favorite regional Mexican chefs :-). To Amy C, if you have a Cost Plus Market in your area, they stock the Gypsy brand.

    YUM!! Your salad looks fantastic! We don’t have an Earthfare where I live, but I just found a place where you can build your own salds JUST LIKE THAT recently, and I am completely stoked! (Now I want to go get one) hmmmm…..

    That is an amazing salad, for sure. So many ingredients! I wish there were a good salad bar somewhere around my area.

    Coconut chai sounds delicious, I’ma hafta try it!

    Coconut chai counds fabulous! And the salad looks huge and yummy! Do you find that the fiber from all the veggies rolls around in your belly all afternoon??

    Earth Fare looks scrumptious- especially that salmon. Wish we had a great salad bar near me.

    Kath! I didn’t realize that I will be in Chicago this weekend too! We are going to the Ohio State/ Northwestern game, and a lot of my family will be there so I know we have a pretty full weekend, but were are you guys going to be again? I would love it if it worked to see you and Jenna and all of the other famous girlies!!

    Hi, guys … I have a question for all of you.
    I live in a pretty small town with only a “regular” grocery store, but this weekend I am visiting place with a Whole Foods. So I’m wondering, what are your favorite Whole Foods items? (Stuff that doesn’t need refridgeration and can travel home…)
    I have a list going including Kashi products, Larabars, wheatberries (never tried these cause I can’t find them at home!) Any other suggestions?

    Carrie H, I’m from a little town too. In September I went to Whole Foods for the first time, and I was the biggest yokel. There was a wine-tasting going on in the store! I spent waaaay too much money on wine, cheese, and sushi, but it was all delicious. I didn’t try the gelato there, but it was definitely tempting.

    Hi Kath;

    When I work in India, they normally refer to Chai as plain tea and Marsala Chai as the spicy type. I think it has cardamon, black pepper, cinnamon and cloves in it. But I usually call the spicy stuff chai as well. 🙂

    And i just realized that when i think i’m “hungry” im usually just thirsty!
    so maybe that will help you although duh you already know that!
    but still.
    i think the winter makes us thirstier!

    hey kath! i just saw this am’s discussion. I personally think you do not need to lose a pound b/c I don’t think you eat enough cals as it is for the huge amount of exercise you do each day. I think as long as you are happy and healthy, you are perfect just the way you are and a few lbs don’t mean anything! my weight fluctuates daily!

    Hey! I won’t be able to make it this weekend… but I’ll cook a great dinner and dedicate it to you guys! Unless, of course, you all want to come to Hoffman Estates (about 40 min away).

    No, there is no specific amount. We didn’t want to have to turn down social invites, but we will most definitely make sure if we do go out to dinner this month that we minimize the cost. And once a week is the limit. If we have dinner out, no lunches can be out or they count towards the $126.
