Homemade Nutty Granola Recipe

This homemade nutty granola recipe is a family favorite courtesy of my father-in-law, John! It’s packed with nuts, seeds, and coconut and is made without oats, so it’s gluten free. Almond meal, honey, and coconut oil bind it together.

John’s Homemade Nutty Granola Recipe

My father-in-law, John, has been making this amazing nutty granola recipe for a few years now. He tells the story of how he walked into a friends’ kitchen once right when it was coming out of the oven. The smell of toasted almonds and roasted spices was so delightful he asked for the recipe on the spot. His friend Paige gave it to him, and he’s been making it ever since!

This is a very nutty granola recipe – there are no oats!

I had the pleasure of enjoying John’s granola recipe a few times, and it’s unlike any other granola I have tried. Normally when I think of granola I think of oats. This granola actually has no oats! The ingredients include mostly nuts and seeds so it’s almost like a toasted trail mix. The nuts bake until they are a lovely golden brown, which makes them super crunchy. Warning: you’re going to want to eat this handful after handful. Given the density of healthy fats, it’s very satisfying in small doses.

The Ingredients

Nuts

The bulk of this recipe is sliced almonds (3 cups) plus a side of chopped walnut. You can mix and match any nuts you like, but I do recommend the sliced almonds because their long shape is perfect for granola clumps!

Seeds

Pumpkin and sunflower seeds pack in more good-for-you fats.

Coconut

Toasty, crunchy shredded coconut is for all you tropical lovers out there!

Almond Flour

The flour acts as a binder and helps the granola clump together

Honey + Coconut Oil

These two ingredients help mix everything together

Vanilla + Spices

All the aromatics make your kitchen smell divine! Cinnamon, ground cloves, nutmeg, and ginger are perfect for fall.

How to make Nutty Granola

Preheat oven to 350 degrees and mix dry ingredients together in a bowl.

Add the wet ingredients and stir until well combined.

Spread onto a baking sheet lined with parchment.

Bake for 20 minutes, stir. Bake for 5 more minutes until nuts are golden brown.

Allow to cool before storing in an air-tight container.

Ingredients

  • 3/4 cup raw pumpkin seeds
  • 3/4 cup raw sunflower seeds
  • 3 cups sliced raw almonds
  • 1/2 cup chopped walnuts
  • 1.5 cups almond flour aka almond meal
  • 1.5 cups shredded coconut
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 3 tbsp vanilla extract
  • 1/3 cup coconut oil melted
  • 1/3 cup honey

Instructions

  • Preheat oven to 350 degrees.
  • Mix together dry ingredients.
  • Sprinkle spices evenly around.
  • Add wet ingredients and stir well to combine.
  • Spread onto a baking sheet covered with parchment.
  • Bake for 20 minutes, stir.
  • Bake for another 5 minutes.
  • Allow to cool before storing in an air tight container.

    Yummm sounds good. I thought oats are gluten free?? Are sliced almonds and slivered almonds the same thing? Can’t wait to try this.

      Oats are naturally gluten free but sometimes there is cross contamination so check your package to be sure. And slivered almonds are like sticks and sliced are oval shaped!
