I made Kodiak cakes with bananas and toasted coconut topped with PB, Cookie Butter, coconut and birthday sprinkles. Incredibly delicious!

    I was super hungry and having a hard time getting back to sleep after I fed the baby at 4:30am. I allllmost got up and made pancakes, and this really makes me wish I had! Instead I just wasted an hour or so laying in bed 🙁

    My son told me this morning that it is spring’s birthday. He had a peanut butter pancake topped with peanut butter, oatmeal, yogurt, bananas, blackberries, blueberries, strawberries, raspberries and granola to celebrate. It is a rainy first day of spring here, a good day for some inside spring cleaning. 16 weeks already, you’ll be at the halfway point before you know it! Happy birthday to your mom.

    I had pancakes for breakfast today too! Although after making them, I had no time to actually eat them, so they got packed in a tupperware to bring to work 🙂 I have got to check out Kodiak Cakes though – they look amazing!
    Totally weird, but you were in my dream last night! Must have been because I was catching up on KERF before bed. But we were at a cottage, talking about all the funny/delicious things we put in our oatmeal! Love it 🙂 Have a great day!

    On a completely separate note: I discovered another use for the infamous Ikea Milk Frother…blending vinaigrette! It turned into this beautiful, voluminous, creamy dressing within seconds. Yum!

    Aw, I love how a little shake of rainbow sprinkles can make a whole dish look extra festive! I’ve got some wayyyy at the back of my cabinet that should most definitely be brought out for this lovely first day of spring :).
