Delicious + Nutritious

Snack attack around 4pm – hunger comes on FAST these days!

So I threw it out and switched to this instead:

I toured a house with Karen this afternoon and walked there (1 mi) to meet her. It seems like the perfect fit (she’s hoping to rent something downtown) so hope all goes well getting her in!

When I returned home, hungry again! Like stomach-growling hungry. I chugged some water and ate this protein-packed bowl of greek yogurt with raspberry jam and chia seeds.

And worked on the porch for the rest of the afternoon!

Dinner was goooood!

I defrosted this hot smoked salmon that I won at the Foodbuzz Festival this November and we heated it in a pan (I know, smoked salmon, but I gotta) along with some baby spinach = nutritious.

And then we made the delicious part of the meal!

Maccccccccc! Remember my disappointing experience with the powdered mac? Deluxe squeeze pack is the way to go. Super energy dense and high in sodium and fat, but sooo good! Way better than powdered kind!

Consumed on our beautiful evening porch! We sat out there talking long after the sun set.

    I have been reading your site for quite awhile now and love all your ideas for oatmeal! Thank you! I was wondering when you say you “worked” or you work at home, what is your job? You never mention what you do. I know you maintain this blog but that doesn’t pay money does it? Just curious. Thanks again for you wonderful site!

      Hey Sara,
      Indeed, blogging and maintaining a website is a full-time job 🙂 I do make a living from it. I’m operating two blogs now (katheats.com and babykerf.com) so it’s now twice the work – or maybe more like 1.5 times 🙂 I also do a bunch of little projects on the side – from working at the bakery I own with my husband to smaller freelance projects related to KERF.

    i love mac n cheese!! always seem to forget about it though. as embarrassing as it is, i have to say i have great trouble straying from my favorite kraft, BUT now i’m anxious to try the deluxe squeezables. have a good night, kath 🙂

    I actually keep a box of that mac-n-cheese on hand at all times. It may not be the most nutritious choice but it’s quick, comforting, and easy to mix in fresh ingredients.

    Just the descriptions on that bar make it sound pretty iffy!
    Have you ever made mac n’ cheese using pasta and laughing cow wedges? I love using the swiss ones (two wedges/serving) to make deliciously creamy mac n’ cheese!

    hi kath! heard from my mom that you guys got to meet and tour the house today, so glad karen liked it. i loved living there when i was in cville. 🙂

    so i think we’re living parallel lives, because i had mac n cheese tonight too! yum. never have tried the whole foods brand though… will have to put it on my list. and how funny that we’re due the exact same day!! i’ve been wanting to tell you that you have totally turned me on to smoothies – i have one almost every day now. i find them to be the perfect pregnancy food… healthy, filling, and easy to digest. i’m sorry you’re still not able to eat greens. i’ve been back eating salads for 2 wks or so now, and it’s great. i missed them! still can’t quite stomach fish though, but your smoked salmon sounds good!

    anyway, love your blog and will definitely keep reading!

    Kraft has individual packages of Easy Mac. Put the noodles and water in microwave and then add the powdered cheese. Yummy and wet and delicious if you are after junk food that is not good for you. Adding more or less water makes it dryer or wetter. Oh such good language. They come in 10 individual packages per box. Once in awhile you just have to have it. Nice to have in the cupboard for just those days.

    LOL, yes I am a human. That is so cute!

    I used to make it my mission to squeeze every last glob of cheese out of the packet. I even had to implement the toothpaste rolling technique a few times but I feel it was well worth it 🙂

      I have one! Although I see now it’s more for the whole post than one photo. I have the Pinterest Chrome extension that lets you choose any photo on a page – so handy.

    I should be ashamed at the amount of Mac & Cheese I’ve eaten in this pregnancy. =) Carbs and Cheese. Can’t go wrong…. We have some restaurants in LA that make Mac & Cheese stuffed Grilled Cheese! No joke.

I know you’re crazy busy right now, but I have a possible add to your Home Neat Home series that I’d LOVE to see… A co-worker is buying a new home and wants to do a porch addition/reno… I sent him to your blog and we both had a hard time nailing down a good round of posts related to your porch. It’s exactly what he’d like to do, and he loved what he saw. When you’re ready for the next installment in the (awesome) home series, a porch post would be da bomb!!
