Halloween Dinner

Panko Baked Cod with Forbidden Rice and Butternut Squash

These colors are just like Halloween!! We thawed out some frozen cod from Trader Joe’s and baked it for about 20 minutes with a crust made from panko bread crumbs and Asiago cheese. Just press the toppings on the top and bake! Very simple and delicious.

The forbidden rice was a gift we got for Christmas, and it’s very interesting but delicious. Very chewy. Kind of like eating shoe string casings with rice on the inside. But I love chew! Here’s a link to the first time we made it with more detail: Forbidden Rice + Luck.

And lastly, we reheated some leftover butternut squash. I topped mine with 2 tsp of brown sugar!!

This dinner was so filling and really hit the spot! Hot tea to drink (it’s cold again!)

Total calories were about 423 with 5 grams of fiber and 30 grams protein.

Snack

Chem lab went well and I was done a little early! I always spend my rides home deciding what to have for a snack. But I have to say, my lunch held me over QUITE well today because I didn’t really need a snack until 5:00. I decided to do something different and make a smoothie with some frozen mango we’ve had in the freezer for ages.

I used about 1 cup of the mango (thawed it some first in the microwave or my blender leaves big chunks), 2 oz vanilla hemp milk, 2 oz skim milk, and 1 tbsp flax. It was PERFECT!! I enjoyed it like a custard with a spoon to make it last longer.

I have decided to take my Stats test tomorrow evening instead of Friday afternoon, so unfortunately I’m going to be slammed these next 24 hours. I’ll be in and out, but I hope to catch up on all comments tomorrow night or Friday 🙂

    Haha, your meal’s holiday theme is a bit out of season, but still quite fun!! :0D That forbidden rice sounds especially enticing – love it!!

    That “custard-like” dessert looks like such a refreshing way to end a great meal – yum!!

    yikes, good luck on that stats test tomorrow evening!! Enjoy the rest of your Wednesday evening, as well :0)

    That is Halloween on a plate! Your fish looks great but that smoothie really caught my eye. We love the frozen mango from Trader Joes! Do well on your test tomorrow!

    Anyone have breakfast ideas that really hold you over OTHER than oatmeal.

    I have tried to eat it, even Kath’s recipe and I cannot stand it.

    I seriously think I had a traumatic experience as a child with oatmeal or something.

    I currently yeat fruit, yogurt and kashi granola bar, but am STARVING by 10:00.

    Christine, I’m sorry I didn’t see your comments about milk in additions to Goalie’s, so thank you as well. The chocolate milk site made me realize that my fear is ridiculous.

    Would you mind sharing the brand make up and chapstick that you buy. I typically use neutrogena. Thanks!

    maybe you could try cream of wheat, grits, or even grape nuts cereal heated up (a little goes a long way to fill you up). i don’t know if you’d like these, since they are all hot cereals like oatmeal, but i think they are sure good!

    hi kath! your dinner looked amazing. i was wondering if you have tried the kashi crackers in the veggie flavor? i was considering buying them but i’m not sure if they would taste good with cottage cheese or something like the honey sesame and 7grain.

    The bulgur did hold me over well! I’ll have to give it another test though. But I think the real key to AM satiety is the flax, walnuts and peanuts. The grains provide the energy 🙂

    I had Kashi Heart to Heart cereal last week with walnuts and flax and was not hungry for at least 4 hours. You should try playing with mix-ins to the breakfasts you like. Build a mountain of yogurt and fruit and then add lots of healthy nuts and fats. It does raise the caloric value of breakfast, but I think the satiety is SO worth it not to have to get hungry for a morning snack.

    Nice catch!!! I was not cold at 5:00 because I’d just driven home in a hot car with the heat blasting even though I didn’t need it, but by 7:30 I was freezing again 🙁

    I have never liked vegetable seasoned things, or many seasoned things in general, so I’m 99% sure I wouldn’t like those nearly as much as the “plain” 7 Grain and Honey Sesame. I think it’s the garlic/onion powder companies put on their seasoned items that I don’t like because it stays with me, so if that doesn’t bother you, then I bet the taste great!

    Do you have time to make eggs in the morning? If so, making those with fruit or cereal would probably hold you over for longer – I know they do for me!

    I just had the best breakfast! I took the “Pumpkin Pie Cake” recipe
    little less than 1/2 c of pumpkin
    egg whites (equivalent of 2.5 but from a pint of pastureized)….
    1/2Tb each of Cinnamon and Pie Spice
    1 ts maple sugar
    1/4 cup of cooked steel oats I had already made… you could sprinkle old fashioned ..

    cooked it for 2 min… THEN…

    Slice a banana on top
    drizzled 1 tsp natural peanut butter
    mashed a bit, sprinkle more cinnamon

    YUMMY! Super fast, and has veggie, fruit, healthy fat, whole grains!!!

    My taste buds were completely satisfied with the mix, the sweet fruit of banana, salty dense peanut butter, warm squash, and cinnamon

    This may be my staple breakfast…

    sp–a good old pb& j sandwich with a banana, heated on a skillet, served with a glass of milk (or a carnation instant breakfast) is a yummy breakfast! Or there are kashi waffles with a yogurt parfait with fruits and nuts. OR, one of my favorites, is scrambled eggs with lots of veggies and cheese, rolled up in a whole wheat tortilla, served with oranges.

    Cereals fill me up too, as long as I have enough of it. I’ve found that 2 cups is the perfect amount of kashi heart to heart to hold me over, so you could always try experimenting with the amount and see what works. Also, adding yogurt instead of milk seems to give it more filling power, and when paired with a fruit…goodness…very filling and delicious. 🙂

    Smoothies are of course a yummy b-fast option, but if its at all as cold where you are as it is over where I am, then you might be waiting for summer to have that for a breakfast. 😉

    Sounds amazing!! I’m going to have to try combining pumpkin cake with oatmeal. If I can make some steel cut oats this weekend, that would be perfect. Thanks for the idea! Wish I could see a photo of yours 🙁

    In the post I said I baked it for 20 minutes. Baking is probably the easiest method because it requires no flipping. But you can also easily sear it in olive oil. Go to http://www.cookinglight.com and look for some recipes which should give good tips.
