Green Tacos

Jolly hello there!

Our new muffins – Carrot Raisin Walnut – are my FAVORITE! I used to love them from the Charlotte GH. They’re a bit hard to make, so we didn’t open with them, but I sure hope they are here to stay!

I went to Body Pump, worked it, showered and did my usual bike trek down to the bakery. I always come hungry but we get a rush at noon so I jump right into helping customers. I nibbled on some muffin and two hunks of this Popeye snake during quick breaks until things cleared out so I could sit down for lunch.

Since I’d already had my carbs for the meal, I made lettuce wraps!! Easy fun solution if you’re breaded out.

I topped two big leafs of romaine with tomato, pepper and cucumber plus a scoop each of tuna and hummus and a slice of cheese.

Midway through the shoot Matt stuck in a deformed tofu!

I have a long list to do this afternoon on the computer. Changing months means extra paperwork

    Lettuce wraps are my favorite way to eat stir-fry when I don’t want rice. They’re just so darned good!

    green tacos! that’s a really smart idea. You might like Korean bbq wraps then! 😀 We always wrap certain meats+rice+veggies in lettuce.

    I love the green tacos 🙂 I am a huge fan of wrapping just about anything with lettuce or collards or whatever chard leaves I have on hand.

    I also use cucumbers sliced thinly as a wrap, too.

    New month…I know…where did the summer (or 2011) go??! Good luck with all your paperwork!

    I love lettuce wraps, especially in the summer when sometimes bread is just too much for the hot weather. That little bit of tofu’s definitely the star in yours! 😛

    I’d imagine you would get tired of bread at some point, working in a bakery! If I wasn’t intolerant to wheat, I would totally open a bakery and eat until I was tired of it!!!

    Kath, it was so fun to meet you! I think I was a little star struck.

    The bakery is wonderful! Sorry I had to rush off without saying goodbye, but the sandwich was delightful…the surprise pop of flavor from the olives was amazing! Hopefully I can make it back to try the tuna before I leave Charlottesville.

    Lettuce wraps are awesome! I exercise during my lunch hour and if work prevents me from eating right away, I usually just wolf down the carb part of the meal and then wrap whatever is left in lettuce. Also, it’s a concept widely used in Chinese cuisine. Duck or stir-fries in crispy iceberg – yum!

    Those muffins sound fantastic! I love using large lettuce leaves as bread, or in your case a tortilla! My favorite is using lettuce leaves to wrap a burger! It always tastes so refreshing!

    I was happy to see you using a reuseable water bottle with today’s lunch. It’s such an easy way to cut down the use of plastic bottles. I’m always amazed – and appalled – to see people using plastic bottles at home or anywhere the could easily bring a reuseable bottle.

    i love the idea of breaking a meal into two. i like breaking breakfast into two smaller bits, before work and halfway through the morning. the “green tacos” look delicious!

    Whoa that Popeye snake looks incredibly intriguing and delicious! I see that cheese oozing out… What kind!? Looks like they would be a fun addition at a party for sure. The closest Great Harvest in Boston, to my knowledge, is in Newton 🙁 not a hop skip and jump!

    I love how creative you were with lunch. Great idea for lettuce wraps and they look like they were super satisfying!

    I hope those carrot muffins stick around for you! Those would totally be my first pick… I’m not surprised they have sold so well for you!
