Good Pancake Morning

Up at 6:30 this morning to see Matt off to work and get my body clock back on normal hours.

For the first time, I was in charge of Pancake Monday!

How ’bout some Kodiak cakes! I’ve found that the trick for perfect cakes is not to use a 1:1 ratio as the box says. But use a 1 mix: 0.9 water so you have a thicker batter. Makes nice crunchy golden cakes!

Thinking about going to Celeste’s killer Monday yoga class again. Gotta get in as much of my studio as possible this week. They don’t have hot vinyasa in Cville 🙁 🙁 😥

First I gotta get this lease signed and scanned! Wahoo!

    You can make your own pancake mix from scratch and keep it in your pantry to use whenever you need to.

    I was planning on pancakes for breakfast too. It’s one of those mornings where I can’t decide what to have. Everything and nothing sounds goods. Your pancakes make me lean toward pancakes now, though.

    There are a couple of teachers in Richmond that teach heated vinyasa. One of my friends, Deb is actually one of the best teachers in Richmond for it. Her style is amazing and she teaches at a couple of different studios. There is also one Baptiste class on Sundays that is heated at a studio in downtown Richmond.

    Oh man, I need some butterscotch action in my morning! A couple of weekends ago, my boyf and I went to Maine and had homemade butterscotch popcorn. Believe it.

    Your pancakes look incredible. Your blog is a daily read of mine and you have inspired me to move towards healthier eating rather than just “random” eating. I tried kale chips for the first time two weeks ago and now I’m hooked! I get kale whenever I go to the market now and even enjoy it raw in sandwiches in place of lettuce. Thanks much!

    (BTW, I didn’t know your hubs went to WFS – my BF did too! He still raves about those grey workout tees and still has his – his comfiest sleep tee ever, he claims.

    I saw you comment that you didn’t like bikram? What is the difference between hot yoga and bikram? I was under the impression they were fairly similar… ?

        Oh no, the only similarity is the fact that they are both done in hot rooms!!

        This is my interpretation based on limited knowledge of yoga history and having gone to one Bikram class (in Cville) and many hot vinyasa classes:

        Bikram =
        104 degree room
        Same sequence every time (which includes many of the typical yoga poses)
        Very “strict” in the way you do it
        No music
        Teachers have a very formal training
        Not very “flowy” and more “hold this pose and then transition”

        Hot vinyasa:
        Very hot room – usually in the 90* range
        Much more variable in styles depending on teacher
        MY studio has amazing music, rock-out style
        Very flowy (think downdog to warrior to chataranga and sun salutations) <--- the best part. I like flow Very cool, casual attitude about the series and practice but still very inward focusing. Just more laid back (and again, this is just my experience - not all studios are like that) LOTS more sweating because a lot harder workout (in my opinion!)

    Those pancakes look absolutely incredible! I’ve never tried Kodiak cakes because I’m gluten intolerant, but I definitely admire them from afar. 🙂 Good luck getting back into a rhythm!

    How did you mix the PB into the pancake mix? Whenever I do that it always seems like the PB gets kind of burned while they’re cooking.

      I just whisked in a tbsp to the batter. I used the TJ’s PB which is pretty liquidy

    Those pancakes look so delicious. I never have time for pancakes during the week because I’m not exactly a morning person, but I need to try them on the weekend. I’m like you – I like my pancake batter a little thicker. 🙂

    It may not be 90* in the room, but the vinyasa classes at Studio 206 on the Downtown Mall are fabulous. I think they heat the room to the low- to mid-80s, so you still get pretty darn sweaty. Anyhow,the classes are VERY challenging. I practiced there for years and miss it!

    That looks like the kind of pancake my four kids would devour!!!lol! They love peanut butter, that’s a sure thing! They also don’t mind fruit bits on their pancakes, even if I put it in the batter itself. I heard there are some kids who would literally pick the fruit bits off the pancake, lol! lUcky me, I guess~
