Gone With The Wind

It’s so windy out the day is being blow away before my eyes! I just finished lunch!

First news: I rocked my Biochem exam with a 98!! Sweeeeet! Just have the final to get through and I am FINISHED WITH CHEMISTRY!!

We don’t have Foodservice today, so we got to come home after Food Science, although Kelsey had to meet with a professor so I knew it would be closer to 1:30 than 12 that I’d get to eat lunch. So I packed this dried fruit snack. It held me over perfectly.

I came home to find Matt with clean teeth! He went to the dentist on his day off and thankfully had no cavities or problems. (Errr..let’s just say it’s been a LONG time since he’d be to the dentist – that slacker!)

For lunch we whipped up some homemade bean burgers with our latest batch of cooked dried beans. These were very starchy (like pintos) and made great burgers.

Seasonings included: Worcestershire, garlic powder, chili powder, salt, pepper and sriratcha.

Toppings included: a thin spread of pimento cheese, ketchup, mustard, pickle.

I also assembled this raw veggie salad tossed in balsamic and EVOO. It didn’t have enough fun pieces and was a bit tough to get down by the end.

Plus an apple with some Barney Butter – but I didn’t finish it. The cauliflower and broccoli and huge burger filled me up so much that I couldn’t fit the apple and gave it to matt after 2 bites.

    I just thought I’d let you know… I’ve been converted to Oatmealism today 😀 . I made my first bowl EVER this morning and LOVED it. The banana adds so much flavor and texture! I added in some dried goji berries, chopped unsalted peanuts, and a spoon of pb (of course) and it was heavenly! I can seriously see myself trying new varieties everyday! Thanks Kath!

    Hope Matt waited an hour after the dentist before eating. Wait, is that for flouride or swimming?
