Taco Belle

Matt and I decided it was way too pretty of a day to go to the gym, so we brainstormed ways to get outside and get moving. The conclusion was a much-needed trip to Target via bike. It was about 30 minutes of biking there and back, plus walking around the store, which adds miles!!

I found a few cute cotton stretch dresses and two awesome shirts that I got with my mom’s spring shopping money. Plus a beau-ti-ful bright green A-line dress with a belt that is a wee bit too tight in the bust, but I am hoping that it will fit better in a week or so

I’m planning on wearing it to our Charleston wedding…NEXT weekend!? Gosh that is so close!!

I would have eaten a snack today except that I was out and about. We were pretty hungry for taco salads when we got home.

The centerpiece of this dinner was obviously the delicious Food Should Taste Good Yellow Corn chips, which were seriously the best corn chips I’ve ever had. Something in the flavor tasted so authentic – like I was in a Mexican restaurant but without all the grease. Yum!

The salad was a huge bed of shredded lettuce, carrot and cabbage (from a bag), followed by a layer of fat-free ground turkey breast cooked with cumin, chili powder, oregano, salt and hot sauce, followed by some pepper, tomato, avocado, cilantro and Fage for “sour cream” = (the best part)

We also dabbed Annie’s Woodstock in the corners for moisture and a cheesy flavor.

We ended up eating the whole bag of chips, but it was a smallish bag 🙂

I am excited for tomorrow because I turned in my capstone Foodservice project today!! Just 1 more big hump (my banana oatmeal experiment report + poster board) followed by a few tiny humps (an outline, a discussion board, a presentation) and 4 finals and in about 10 days I’ll be freeee!

Off to sip a cup of tea …

    Those chips look so good! Most tortilla chips are pale and blah but those look like something you’d find at a Mexican restaurant.

    Kath,
    Put a short sleeve blouse over the dress. button only a few bottom buttons and then belt it. Or wear a short, cute jacket over the dress. You will probably want something with the dress as it might be chilly.

    What fun dinner! Taco salads can be perfectly healthy when they’re homemade. Glad to hear you got to enjoy the lovely weather with a bit of exercise + shopping!

    I just read your article on people being programmed to gain weight. Do you think that, based on that article, you will move away from your “intuitive eating” approach and back to a more controlled “calorie counting” approach to your daily food choices? I also ask this because of your recent weight gain comments. I think you look great by the way!!!!

    I love reading your blog due to the fact that you are an intuitive eater! I think that intuitive eating can work in the long term – if you are truly in touch with your hunger/body. It takes a LONG time for that to happen. When I first started eating intuitively I was sometimes careless about my choices. Once I figured out that intuitive does not mean “eat whatever you want” I really came to a good place of balance. I now make the healthiest choices possible 90% of the time..and it is working for me!

    I would love to hear your plan! Thank you for a GREAT & inspiring blog!

    Quick question – I notice you almost never have fruit for dessert. Is there any reason for this? I ask because I recently read that having carbs before bed makes it difficult to fall asleep. Any thoughts on fruit before bed? Thanks!

    I will definitely not be moving away from intuitive eating or back into calorie counting. I think I eat 90% intuitively as it is and am very happy with how I eat and my food choices, but after reading the book, I think I was trying too hard to eat whenever I was hungry – and because I am human I was eating when I wasn’t always hungry and still overeating at special events – that led to weight gain.

    I think the lesson is clear: NO ONE, not even a book on intuitive eating, should tell you how to eat. It’s something you have to figure out for yourself with trail and error. So I’m just going to continue on as I am, and note that if I am going to eat when I am not hungry at special occasions, then I need to balance that by letting myself be a little more hungry on other days.

    Hope that explains it 🙂

    No reason in particular. I do have fruit for dessert sometimes, but I usually combine it with cereal/milk or yogurt because I think fruit is more fun to eat as a topping than by itself. If you want to get into the nitty gritty of blood sugar or if you have trouble falling asleep if you eat sugar, than you might want to pair it with protein or skip it before bed, but in general, I don’t think it’s anything to be concerned about.

    this dinner is seriously one of the best you’ve made in months. I am SO making this as soon as I have a working kitchen again (in the middle of moving from condo to dad’s and philly). Love all the colors, different flavors, and combo of protein, veg, etc. yum.

    Hello, I’m Meghann — I’ve been making the blog rounds lately and FINALLY commenting on some of my favorites, especially when a post topic warrants it 🙂

    Maybe a dumb question, but do you mean Charleston, SC? I am heading out there for a wedding THIS weekend (April 25)! I am so, so incredibly beyond words excited! My boyfriend and I both went to the College of Charleston (as did Jenna at EatLiveRun!) so any mention of Charleston, naturally, has me pumped and plotting.

    Please, please let me know if you and Matt need any suggestions or tips around the city…Adam and I lived there for several years, and I can also scope out anything you might be interested when I’m there this weekend!

    PS: Healthy eating in Charleston IS, obviously, possible. However, I do not recommend it, and I say forget the tightness of the A-line dress for now, because Charleston food is WORTH IT. [I feel a little bad typing out that rationalization] 🙂

    Your salad looks delish! I’ve been meaning to make taco salad and might just do that tomorrow night … I’ve fallen madly in love with the avocado and will use any excuse to use it!

    And cute summer dresses! I can’t wait to get more cute summer stuff in the next few weeks. Though, being in Canada, the summer is short and not too hot, but it’s not snowing, which is always a good thing. 🙂
