Gold Out Of Straw

Went to Body Pump this AM and got my butt kicked by Chris, per usual. Boy does he love to torture us! Today it was during triceps – double sets of dips. Ouch!!

But all for the greater good of the muscles : )

I came home to a completely empty fridge and pull out things that looked like they might add up to a lunch. Luckily that included 2 dwindling vegetables!

Ingredients

I turned these into a bean + veggie bowl topped with cheese and served with chips

Giant beans, sundried tomatoes, green pepper and carrot topped with cheddar + goat cheese and chips, all drizzled in a little fruity EVOO

    Our daughter and I picked a bunch of apples a few weeks ago, and we are trying to eat them up before they go bad. So, I had one for lunch, and will have to do something with the other 10 or more that are left.

    Considering the emptiness of your fridge you did really well in the thrown together lunch department. I love shopping for groceries. I try to channel KERF in the produce aisle. Have fun!!!

    Using what you have on hand, that’s the name of the game some days.

    I like that you “wrote” on the picture. Did you use picnik? I want to do it in Lightroom but I can’t so I use Picnik for pics I want to label/write on like that. Just wondering if I am missing some big trick in LR 3?

        So you have Photoshop Elements, too?

        I actually have the FULL Photoshop program on my computer but have neglected to ever learn how to use it….every time I try, I get overwhelmed with all the layers, options, etc and give up. Love LR because it’s so much easier for me. I probably have Elements too. Guess I need to read up on that…. 🙂

    ahhh I’m super jealous of that leftover salad. I’m on a basically can’t eat anything diet to find out what foods are affecting my digestive system. the only thing in the salad that I can eat for the next 5 days was the pepper…

    I always have a hard time making my meals by the time Sunday and Monday roll around since I go to the grocery store on Monday afternoons after work and all of our produce is either gone or looking quite wilty. The pickins are slim, that’s for sure!

    Apples are great here at the moment, little tiny ones that fit in the palm of a small hand perfectly and are gone in two bites. Those tortilla chips look so good and are those butter beans I see, love em! Butter Bean mash…

    Oh I LOVE the burn of BodyPUMP! We just launched the release 79 this week, and it is awesome! It is fun to remind the class that it IS for the greater good of the muscles–spot on 🙂

    Youre so lucky that your leftover bowls look like that!! My leftover eats usually consist of a fried egg on some wilted cabbage. Neither photogenic nor that tasty! I made some leek and potato soup yesterday though – THAT was both amazing and hopefully can be my new go-to store cupboard recipe given that both of them keep so well!! xoxo

    That’s an awesome lunch for not having much to work with! My go-to lunch when my fridge gets empty is just a bagel with almond butter + an apple. Definitely not as creative as yours!
