From White To Color

The day has ran away from me!

BLOG-9483

And so has the snow. There’s no sign of any flakes left!

I had a fun trip to the gym on foot today. I wouldn’t say I ran – perhaps trotted is the right word? I didn’t want to bike or drive on the slushy roads so I used my feet.

2 miles later, I did some good weight lifting and was on my merry way back home. It was a great, hard workout!

BLOG-9489

A colorful lunch!

BLOG-9494

I made good use of all the leftovers in my fridge –

BLOG-9491

    • Spinach
    • Red pepper
    • Quinoa
    • Butternut squash
    • Chicken
    • Sharp cheddar
    • Grapefruit

And an apple cider, maple, mustard, olive oil + salt dressing

I will gladly share some of the snow we have here in MD with you 😉

I had to have a super colorful lunch too, to make up for my lack of color in my little snowglobe house I’m trapped in right now. Enjoy your afternoon, Kath!

Your salad beast looks like a pretty good reason to do the Friday dance, even if it weren’t Friday.

Weird question, but what is the paint color (the orange/pink color) in the first picture. I have been looking for a color like that for my kitchen. Thanks! Elizabeth

The way you do the grapefruit makes it look so good! I’ve always done it the traditional way where you slice it in half and cut out each individual section. I’m going to have to try it your way!

I wish our flakes were gone. We’re looking at 4+ feet of snow that has to melt, and that’s not including the mounds that have been plowed off the road or in parking lots. It’s going to be a looong winter here in New England. The salad you made is so pretty 🙂 I love butternut squash on mah salads 🙂

I never ever would have thought to put these things together on a salad. Especially the grapefruit, with chicken and quinoa and squash?!

I am desperate, and I mean DESPERATE, to find a yummy dressing for my salads. Did you like the dressing you made today? When you say apple cider, do you mean vinegar or actual cider? And did you use equal parts of each?

Sorry for all the questions but I would kill right now for good dressing.

They key to a good dressing is a thick, aged balsamic vinegar and/or fancy olive oils. Splurge on them and JUST use them for salads – not cooking! There’s no need to mix them up – just drizzle on! I also have a Roseberry dressing on my Recipes page that’s mixed and good
