Food Is Beautiful

First off, I have had insatiable hunger today!! I think it’s just one of those days of the month because it doesn’t feel like real hunger – just this pang that won’t go away! I’ve consumed many bottles of water (I also feel dehydrated) and clusters of granola, but it wasn’t until dinner that I really felt satisfied.

Afternoon snack of milk, frozen raspberries and granola. Protein, carbs, fat, calories, water – should have done the trick!

We all agreed that these were the best burgers we’d had in ages!

Lastly, grilled eggplant (smothered in olive oil and some glugs of Liquid Smoke) plus fresh garden tomato

      Definitely try bison (buffalo) if you get a chance! It’s delicious – a buffalo burger has so much more flavor than beef 🙂

    I always get ‘hormonal’ hunger that won’t go away no matter how much I eat. It usually happens 2-3 days a month and nothing I eat sends that ‘I’m satisfied’ signal to my brain…weird!

    mm! I live in Orlando by Islands of Adventure (which has Harry Potter land) and people go absolutely INSANE for the butterbeer! I can only imagine how phenomenal the cupcakes taste… 🙂

    That avocado on top is a beautiful pop of green. I’ve been eating avocado at EVERY meal lately, even with breakfast ( tremendous with a poached egg in leu of toast). Who is the Karen character always popping up with brilliant food? A neighbor? A relative? Seems like she joins you all the time for meals!

    I love when a meal is chock full of veggies too. SOO satisfying in a weird way 😉 And that snack looks super delish—I kinda want to eat that now. Hah!

    Dinner looks yummy! By the way, I stopped in the bakery today, bought a loaf of bread and some Naturally Nutty and a Savannah bar. I think it was an unusually slow time so no one was really around. Sorry to have missed you, but the store is great in person!

    That dinner really does look fabulous. I’m glad you enjoyed it. And, my offer still stands to have Karen move in with me and make those wonderful dinners if she wants! 😉

    Also – the insatiable hunger thing was me last week. It didn’t matter how balanced my meals/snacks were I was just always left with a bit of hunger! So frustrating!

    Everything looks so good. We love bison burgers. Our Whole Foods grinds it fresh and its actually cheaper than some of the other places that sell it frozen! The eggplant with some liquid smoke is very interesting – I so need to try that since I always love the eggplant dips that are smoked. Yum, I’m so hungry now – good job Karen!!

    Those golden beets in that salad, divine.

    MmmM! I haven’t eaten meat in a while but those bison burgers look AMAZING.

    Also, still have tons of that butterbeer ganache from the cupcake filling (love the images you’ve captured of them BTW!) so I drizzled some over Pudge Free brownie batter and baked up goodies for the office! Mmmmm…the magic lives on!!

    I hate those days when you need food, but really aren’t hungry. Dinner looks amazing! We smoked Boston Butts yesterday and I decided to throw some cherry tomatoes on the smoker…they were amazing! Now I want to smoke more vegetables! The flavor is just amazing.

    Insatiable hunger and you still just had one bite of cupcake?! Now that’s something… Your granola looks like the perfect snack, too. I’m jealous. Should just go use some of my ten pounds of blueberries and make myself a bedtime snack. :p

    I agree with Kirsten – hungry but just one bite of the cupcake! I would have had a tough time stopping at one bite. I notice bison burgers at the grocery store the other day. I thought about the trying them, but the price tag scared me away, especially not knowing if I’d like them!

    I love the looks of that dinner! We had a family dinner last night on the farm and served a goat cheese appetizer- to old-school bovine dairy relatives, which half of them actually liked. I was pleasently surprised!

      Boiled them with the skins on. I think next time I’ll peel first, then boil. It was a little tricky to get the skins off after beets were cooked.

    i love eggplant, i never get enough of it. hate that feeling where you’re so hungry it literally hurts deep in your stomach, but really don’t have an appetite at all. happens too often!

    This is going to sound weird but I’m so glad to hear that you get days when you just feel hungry all the time for no reason. I hate those days as nothing is satisfying for me.

    I’m the exact same way today. I know I shouldn’t be hungry because I’ve had plenty to eat, but I get this pang that just won’t go away. I’m sure it’s hormonal, and I’m so glad someone else experiences such a feeling. Otherwise, I’d think I was crazy.

    Maybe you were hungry because of all of your activity the day before? I really find that I’m not hungry the day of long runs or bike rides, but the next day I am starving! Something to it?

    I LOVE purple food, well except eggplant (it makes my tongue itch, weird, I know) but I really love beets. It’s just fun to eat food that is SO purple.
