Finally, A Balanced Lunch

So glad to have 100% foods I like and want to be eating! Eating out is fun if you have good options, but not when you have to settle for things that aren’t quality.

Had the BEST PB + Banana sandwich today!!!

Plus a spinach salad with pom and spaghetti squash and a touch of Newman’s Own Dijon Dressing

And finally, plain yogurt with pumpkin and cinnamon stirred in!

Lunch calories: 540.

Got in a nice 25-minute walk afterwards. It’s great to be back in chilly, as opposed to freezing, weather!

On the menu tonight for dinner: Wild Mushroom Soup with Turkey!

**** Edited to add: I’m hoping to get to all these questions this afternoon! I’ve got lots to do after returning from my trip, but I’ve got a list of them in my email inbox to tackle ASAP!*****

    Hi, Kath! Glad to hear you are home safe and back eating yummy healthy food 🙂 Although I do have my "nutrition and wellness consultant certification" from the AFPA (american fitness professionals and associates), I am pretty new to this "net" calories versus food intake calories. I'm just trying to maintain my weight but I downloaded the CK exercise and food intake software and LOVE LOVE LOVE it!!! Do you usually judge your calories on your net or on your real intake? I usually burn about 450 calories or so a day through exercise but I eat about 1900. If you know you are going to be exercising a lot that day do you let your intake go higher… even if it says you ate about 2000 but have only 1200 as net? Do you think that going by "net" is the most reliable way? sorry for so many questions- I'm just interested! 🙂

    Hi Kath! How do you cook your spaghetti squash, i tried microwaving it once and it came out similar to an acorn squash consistency, how did you get so string-like? Thanks! love your blog!!

    So glad you like CK!!! I've never used the desktop software, but I LOVE the online one. I have all my meals saved and can easily upload them and log my day in just minutes!

    I stick to net pretty faithfully. If I burn a ton of calories through exercise, I do my best to eat them back, unless I have to go to bed or just can't eat any more because I'm just not at all hungry. But meeting net is very important because if you are consistently under it can damage your metabolism (the ever-popular "starvation mode"). But I wouldn't worry about a day or so.

    But yes, I pay much more attention to net than to gross. Although on days when I'm really low or really high on calories due to too little or too much exercise, it is kind of strange. That's why I'm like you and burn about 450-550 and eat 1700-1800. It just feels best.

    To Cook Spaghetti Squash:

    First cut it in half. Use a big knife, stab through the middle and wedge it down toward the outside. Then take out the knife and repeat on the other side working outwards. (It's easier that way than trying to cut through the whole thing at once).

    Then scoop out the seeds and pulp in the little cavity, and bake it in a 350* oven – face up – for about 45 minutes – or until it looks like it's starting to dry out and you can easily insert a fork into the flesh. (You can roast it whole, but it takes longer.)

    Lastly, when it's cooled down some, take a fork and scrape out the strands. The more you separate them, the more volume you'll get! You can do this during the afternoon or the day before since it takes a while and then just microwave it when you're ready to serve and are hungry.
