Fannetastic Lunch

I was on a call regarding getting life insurance for Matt and me this morning when I looked down to see a message from AnneP who was 15 minutes from the bakery!!

I raced to change the laundry, shower, dress, makeup, pack a lunch and bike to the bakery in time to greet Anne and her boyfriend Matt!

Just in time!!

The lunch I packed in 2 minutes flat was incredible…

Mixed greens dressed in half a tbsp of COCONUT OIL! Why didn’t I do this on a salad sooner!? Probably because coconut oil spends the winter in a hardened state, but this will be my new summer staple. There was a hint of coconut in every bite. Also included: tomatoes, cucumber, lima beans, coconut black bean dip (STILL fabulous the next day!) and goat feta!

For dessert – a giant Cville Cluster nugget. Granola gold. And, ahem, if you want some, you’ll want to be signed up for my OpenSky newsletter, ahem, ahem.

I did an interview for the Daily Progress, our local newspaper and Matt just emailed me that a blurb and my likeness is on the front page!! Bottom right!

    You’re Famous!! How great to be in your paper. I will definitely try coconut oil in my salads as I love it too. I used it yesterday to make granola and since it is so warm where I live it was pretty melted straight from the jar. I think it would do great as a dressing.

    I am impressed with your speed-lunch making skills! Wow. I guess when all the ingredients are right there it is fast, but I guess I dawdle sometimeS? Maybe it was the time crunch. But that is cool to go see a friend and race there!

    ohh what a fun surprise! I’m sad I bought the refined coconut oil by accident a while back before I realized there was any difference, so I don’t get that fun coconutty flavor when I use it. I refuse to waste anything though, so working through it slowly until I can buy the good stuff!

    Congrats on the paper article! You will have to post a copy or a link to the article on the blog sometime! Is it silly that I get excited for fellow bloggers who are making a name for themselves, from cookbooks, to articles in magazines?

    I got the last 3 bag offer and I must say the best granola and oatmeal I have ever
    eaten. Pancake mix is excellent as well..it just lasts longer than the other does.

      Cville Crunch bread is aka Flax Oat Bran

      Cville Cluster is unique to Virginia but we can give the recipe to any other store

    I was inspired to try coconut oil as a salad dressing today but it hardened into globs as soon as it hit my cold veggies and coconut-curry chicken 🙁 What am I dong wrong??? Do I need to bring my salad to room temperature first?
