Eyes Free

Matt and I went on a love hour-long farewell walk this morning.

Which took us to THE CORNER PARKING LOT! From our movie last night. It was so weird to see it in person!

And look – here’s the attendant! I was extra careful to be very nice to him 🙂

We completed our run with tea for me (mint with steamed soy milk on top, which I think makes it naturally sweet)

I’m now all packed up for my 3 day trip. Packing does get easier with time – I get better at knowing where things go.

Here’s a good example of a healthy hands-free lunch to eat while driving. Eyes free so you don’t have to take them off the road.

Hummus (made by Matt this AM) with veggies stuck in for auto-dipping (protein + veg + fat)

A hard-boiled egg (protein + fat). Also easy to eat without looking. I put him in some parchment paper with salt to open into my lap for drips.

I also have packed my last Hungry Bar!! I’ve had this frozen for a while. LOVED those bars. I really do want to order more. This is the Blueberry Walnut and I hope to have it for a snack this afternoon : )

      Tea with milk is the best! I find cooking my oatmeal in milk makes it so much better too.

        I wonder if iced tea is good with milk. I love milk in my tea though! The best kind I ever had was rose chocolate tea with almond milk. Mmmm

    This is a dietetic question, Kath. When you add spinach to smoothies, does the spinach bind the calcium in the yogurt or milk and make it un-usable? I was taught that spinach has that effect but I don’t know for sure. Maybe a question to ask at your conference? Have fun!

      I’m not sure of the specifics in chemistry, but I doubt the spinach would completely void the calcium. I’m guessing that the slight reduction in absorption would be balanced with the quantity.

          I agree. I think a Home Neat Home Packing post would be great. I think most people have the standard carry-on (size wise), and maybe just a bigger piece of luggage. What do you carry in your carry-on vs. your luggage vs. your purse. Things like that….

    I love your lunch to have while driving — usually Jason and I will go on trips together and I’ll make sandwiches while he drives — or I stop somewhere to eat since I am a super messy eater in the car.

    What a fun walk! 🙂

    I used to do A LOT of driving/traveling when I was in high school to get to my yoga training out of town every weekend and visit my brothers in college, and I definitely learned a thing or two about on-the-road foods! Carrots, apples, pb sandwiches, crackers, and trail mix were a few of my staples.

    I love the hummus-lined base of your container. Perfect way to use it AND it helps the veggies stand up straight and not just roll around in the hummus and get it all over the “sides” of the them. It’s the little things I swear that make me happy 🙂

    Yesterday I was looking at Eye-Fi cards based on your use and love of them and so when I came here and saw the title I was all excited. lol

    Oh and those bars, I have countless no bake energy bar recipes on my site that take less than 5 mins to stir together and are vegan, GF, fast, cheap. I never buy them anymore. Unless it’s swag I get 🙂

        I think you have me beat with 3 years only b/c sometimes I have cravings for a certain brand of cookie dough bars that I can’t seem to replicate at home. The ingredient list isn’t so hot, but I just love…the taste 🙂

    I just watched that Parking Lot movie!!! I saw it a few weeks ago and loved it.
    I’m a little envious.
    Actually, while watching the movie I said to my boyfriend “Kath Eats Real Food lives near there.”
    He gave me a blank look and had no idea what I was talking about.

    Love Sunday walks. Our trip lunches look nearly identical; all the components work so well when you’re on the road. Usually we also have lots of roasted almonds to crunch on, and sweet potato chips as a treat to ourselves for driving 😉 Safe travels!

    I try to avoid eating while driving because I always end up with food everywhere… in my lap, down my shirt, in my hair! 😛 This looks like a pretty mess-free lunch though. I’ll definitely have to try that pre-dipped veggie idea!

    Looks like you have *mastered* the art of on-the-road travel!!! I used to eat a lot of those snacks, too… when I had a daily commute to Rock Hill from Charlotte for my job with AmeriCorps. Getting stuck on 77 while hungry is NOT fun!!

    Have a safe trip! I tried making hummus, twice now, and it’s a lot stronger that I was accustomed to, and all I ever wanted in the first place is a little less aromatic and a lot more tastier, the same way I first tasted it. But no luck since then.

    I knew the Corner Parking Lot would pop up on your blog eventually! Fun documentary. There’s a coffee shop where my boyfriend used to barista that seemed to have the exact same work philosophy, owner personality, and so many other strange little things.
