Eggwich

Not your typical eggwich!

Matt made up some egg salad with the hard boilers I prepared this weekend and saved me a smothering for my lunch today. It’s made with carrot, celery, spices and likely a little mayo and mustard. I plopped the salad onto a Flax Oat Bran bun.

I look at that lunch and think two things: nutrients and variety! Yum!

    That egg salad sandwich looks amazing. So jealous of that healthy bread though. We do have a lot of amazing bread here in Portugal but not really whole grain with natural ingredients!

    I was going to say what everyone else already said- I love egg salad and never, ever make it. The little reminders about delicious (but forgotten) foods is what I love about reading food blogs! I should totally add this to my lunch rotation, it’s cheap, filling, healthy with some added veggies.

    I had an egg salad sandwich every one of the 180 days of school during my first grade year. I haven’t eaten one since. In fact I haven’t eaten eggs since then.

    I love a good hardy bread like that! Have you tried orange zest on cantaloupe? With the mint…it is amazing! It really enhances the flavors! Have a great afternoon.

    Hi Kath, I know you like your veggies and you like different things to dip them in. Have you tried BBQ sauce yet? I had a sald at a restaurant w/BBQ sauce instead of dressing and it was fantastic! Now I eat a lot of my raw veggies and salads with a little bit. Hope you are having fun at your internship

    I don’t really like egg salad 🙁 It must be the mayo… This sounds good, though! I’ve never really thought mixing crunchy veggies like carrots or celery with egg salad would taste good, because in my mind egg salad was always sort of just… mushy. But I guess those’ll give it some extra good texture? :S

    If your hubby could make a gluten-free flax oat bread, I would fly out there and give him a big smooch on the cheek. That roll looks fabulous. And I have an instant craving for egg salad now! 🙂

    I used to hate egg salad but I should give it another try. Yours looks tasty.
    I love, love, love carrot sticks with peanut butter or almond butter. It is just the best, far better than ranch for dipping.

    i fix eggs early on the week too – the other day i mistakenly boiled the water first and then dropped in the eggs (i was thinking pasta) but it turns out it still works – just harder to get the shell off, FYI!

    I don’t think I’ve ever made or eaten an egg salad sandwich. I think it’s maybe a more American thing? This does look yummy, though!
