Eggcakes + Peep Nests

Happy Easter morning 🙂

I took the holiday as an opportunity to create a fun pancake breakfast –

I made a batch of pancakes with my Quaker Pancake Mix. The egg was decorated with pumpkin butter, blueberry preserves, 3 little pancake shapes (made with mini cookie cutters), a little Barney Butter, and craisins.

This little peep was in almond butter heaven!

With cooked apples, cinnamon and almond slivers – on top of a little pancake. (Yes, I did eat the peep – he was excellent with MaraNatha on his bottom!)

After breakfast we finished Australia. I LOVED it!!!!!!!!!!! The story, the music, the characters, the production. I love Baz Luhrmann (and Moulin Rouge) and his style. I have a special connection with Somewhere Over The Rainbow from playing Dorothy in 2nd grade, so I loved that theme. The “Mango, mango” song that Nullah sang was lovely as well, and I loved King George’s character. I agree it was a little long, but since I was enjoying the movie (and had the time), the length didn’t bother me. And hunka hunka Hugh Jackman! This was definitely my favorite movie of his.

Matt and I are going off on a romantic biking adventure that may involve a run on the greenway and a trip to the grocery store. Then it’s study time this afternoon.

    good to know you liked australia… i love baz lurmann -moulin rouge is one of my favorites- but had be avoiding australia because it’s so long. i think i’ll do it now 😀

    Love your Easter celebration breakfas, you’re so creative! I made bulgur porridge this morning, it’s a make ahead breakfast that you eat with cold milk! It was so good, I think you’d enjoy as a change-up and hope you try it out!

    Yes, the bulgur porridge is def more like cold cereal – something you’d prob want to exchange for your quicker mornings on the run.
