Easy, Quick + Delicious

I’m all packed up and about to embark on a journey!

But first, overnight oats! [Always my go-to quick breakfast with no time to make and no dishes to do!]

1/3 cup oats, 1/3 cup greek yogurt, 1/2 cup milk, strawberries, half a banana, chia seeds, cinnamon all soaked together overnight in the fridge.

This morning I microwaved for 26 seconds to take the chill off and added a scoop of Sunbutter and a tiny bit of TJ’s Cookie Butter!

I’m going somewhere southern, but the forecast isn’t as warm as this mountain town I live in. Go figure! See you this afternoon!

    I looked at Trader Joe’s last time I was there and couldn’t find the famous cookie butter! Another trip may be in my near future.. 🙂 Can’t wait to hear where you are going!

    Overnight oats are definitely quick and easy in the morning. I find that I make them… even if I am not in a rush because they are just one of my favorite breakfasts!

    Are you sure that is breakfast? It looks more like a decadent dessert! 🙂 yummy! I love overnight oats, I think they taste so much better than cooked. The just seem naturally sweet without adding much to them. Beautiful breakfast for a beautiful day. You may like my cake batter tofu topping, it it kind of reminds me a whipped oats.

    I agree, it seems like a perfect day for tea! Its raining cat and dog out here in Ohio. I still need you help me get over my phobia for Oats, although you make it look so pretty. For that reason, I just want to try it.

    I can’t wait for the weather to get a bit warmer up here so I can try some overnight oats. Just can’t do it when temps are as cold as the fridge. Bbrrrr. Come on SPRING!

    Do you have a belly band? It kept me in my regular clothes until 20 weeks. It’s a life saver in avoiding spending money on multiple seasons of maternity clothes.

      I wore it briefly, but I find maternity pants to be so much more comfortable. If you don’t have the money, there seem to be lots of clothing swaps and Goodwill options or friend borrowing might be an idea.

    I still have yet to find the cookie butter at my TJs and have only tasted it in the form of their chocolate bar that has it in the middle. In better news though, I’m down to maybe one more spoonful of TJs sunflower butter… and you know what that means! (Silly that I actually look forward to things like that- but you get it!!)

    Hi! I”m a relatively new reader and am just curious about your overnight oats, do you boil them first and then put them in the fridge? I love your add ins, they would be a great change up to our normal pot we make each week.

      Welcome! The oats are “raw” and cook overnight in the fridge. Just stir ingredients together and let sit for a few hours

        I’m going to post a quick fun trick that I heard about but never did when I was pregnant. This is for when Baby KEFF is much bigger but chase it w/ an ice cube or a toy car over your tummy…..

    I have been having your overnight oats each day for breakfast for the past 8 days. I can’t tell you how much better I feel! They are filling, delicious, and I definitely don’t find myself wanting to snack as much between breakfast and lunch. Thank you so much for introducing me to this healthy and great way to have breakfast. I am trying to become healthier both in the way I eat and in the exercising more and I really enjoy your blog.

      Hmmm quick math:

      Oats = 100 for 1/3 cup
      Yogurt = 60 for 1/3 cup
      Milk = 60 for half a cup
      Chias = 30 for half a tbsp
      Banana = 50 for half
      Strawberries = 50 for 5 big ones
      Nut butter = 150ish

      = About 500 calories

    I had a very similar breakfast this morning! Oats with chia seeds and strawberries! Although mine were not overnight. Overnight oats are one of my favs- think I’ll be making some tonight!

    Hi Kath….I have to tell you I watched your basic oatmeal how-to video last night…the one with bananas, falx, walnuts, etc…I tried it this morning. It was so delicious! I’ve been dreaming about it all day and I was tempted to make a bowl tonight for dinner. So so yum! I’ve been an oatmeal fan all my life and usually have it with walnuts, raisins and brown sugar. I can’t wait to have another bowl tomorrow morning! Thank you! Enjoy your blog!
