Earth To Dinner

Dinner tonight was centered around the fruits of the earth: mushrooms, eggplant, zucchini, peppers, potatoes.

This wasn’t all my doing though – Hillary brought them! We roasted veggies along with a block of tempeh for dinner and I cooked quinoa in the rice cooker (perrrrrfectly cooked on quick cook setting!) The veggies were seasoned with a fancy fig crème vinegar that Hillary brought, plus olive oil, salt, pepper and cayenne and roasted for 30 minutes at 400*.

The end result, topped with Asiago, was quite healthy!

But my palate didn’t love this combo. Too earthy maybe? Or maybe just too healthy.

Likes: Eggplant, zucchini, potatoes

Dislikes: Peppers, tempeh, quinoa

So strange. I literally gagged at a few bites and the next bite (potato) would be delicious.

We had plans tonight to meet up with Sarah for all-you-can-eat gelato at Splendora’s! Unfortunately we missed this event by one week. So we plopped ourselves at Sweet Frog instead.

I had such the mix it almost wasn’t good!! Cookies n Cream, Coconut and Irish Mint yogurts [didn’t eat the mint – ew.] Plus blackberries, Heath, Resee’s Pieces, butterscotch, caramel and 2 Sour Patch Kids [the baby requested those.]

We just finished episode #2 of LOST for the evening. We’re in the Season 4 Finale! What will we DO when this show ends!?!??

    Ha! It sure looks great in the pictures, but it definitely wasn’t our tastiest creation. Super healthy, though! I doctored up my leftovers with feta and lots of grated parmesan!! We’ll see how it is 🙂

    I loved lost but the series finale, I thought was dissapointing..but I hope you enjoy it! It was definitely a good series.

    Haha that’s usually what my fro yo looks like! I go so few times that I always end up wanting a tiny bit of everything, I can’t commit to one flavor combination!

    I’ve never tried roasting eggplant, might be time to go for it! I’m not a huge fan of the veggie, so it totally depends on the way it’s cooked. I think covered in asiago might just make me a convert…

    Dinner looks delicious asusual. Comming to LOST we thought the same when we are watching it endlessly but now we are watching MONK, Lie to me episodes as a substitute. Let us see what you will do

    I keep wanting to comment on Lost. I was/am a huge fan! I know lot of people were disappointed by the ending, but I enjoyed it. As you are watching make sure to focus on the characters just as much as the “questions” and you’ll be more satisfied by the finale.

    After I finished watching Lost, I started watching an equally intense show (as well as totally dorky and amazing) called Battlestar Galactica–not for everyone, but I liked it EVEN MORE than Lost. I thought that Battlestar had a better plot overall, and it’s such a compelling story about human struggle and triumph, even if there are robots 🙂 It’s on Netflix, I’d really recommend it!

    I got into the Lost craze last year… I think I finished the entire series in a little over a month (during college midterms, too… oops :S)!! I can’t wait for you to get to the final season. It’ll blow your mind!! Ahhh, I just want to tell you what happens!!! But I won’t, of course 🙂

    I was so sad when we finished watching LOST. I still mourn over the fact that the series really is over. I would recommend watching The Walking Dead next. Yes, it’s a zombie show, but I see so many parallels between it and LOST that I love it. The first season is on Netflix streaming and we are making our way through it, just as we did with LOST (two-three episodes per night).

    Watch The WIRE! It’s a great show with fantastic character development. It has 5 seasons, all with a unique feel. My boyfriend and I have very similar TV taste to you and Matt, and we are currently in the middle of season 5 and loving it!!

      I should add – other shows that are great that I’d recommend are Prison Break (all wrapped up now, I believe there were 4 seasons?) and Modern Family!

    What will you do when Lost is finished? Probably talk about the ending all night! Be warned! I think you should leave the last episode to watch early in the evening so that you allow lots of discussion time!

    ….and maybe you could dress up in special Dharma Initiative jumpsuits while you’re at it? 🙂

    ew, peppers and tempeh would make me gag any day (and I’m not even preggers). Also, I usually love your eats Kath, but that ice cream combo is like everything but the kitchen sink – why not keep it simple if you are so gag-prone?

    my husband and i always questioned what we’d do when we finished LOST too… we were obsessed! now we’re hooked on the show “24”. it’s still not the same as LOST though!

    Hmm, interesting combination of toppings & frozen yogurt flavors..
    I always end up having different sections: chocolate, fruits, and red beans sections… Yes they have red beans at yogurtland in california, it sounds weird but it’s one of my favorite toppings 🙂

    Someone prepares/helps you prepare food and you announce to the Internet that it made you gag? I don’t care if you’re pregnant, that’s plain rude. Some things should be kept to yourself. I doubt you’ll let this comment through, but at least I’ll know that you’ve read it.

        The power of words and how everyone interprets them. Maybe it’s because I have been pregnant twice and am aware of how strange food cravings and aversions can be. Kath, I got the impression that you were being totally honest as a pregnant woman whose body is being controlled by hormones and the tiny little being that you are sharing your body with for 9-10 months, that you yourself were surprised that the meal didn’t taste as good as you expected. I commend you for being so honest and open with your readers. I think you are an inspiration to all women especially those who are expecting that we shouldn’t be afraid to share our experiences, opinions, thoughts, and feelings and that even though we all strive to be happy and healthy we aren’t all perfect. Your blog is still the first I read every morning!

        I third this! I have just started watching the second season and am totally hooked. Our local paper (Lincoln, Nebraska) actually just had an article about a couple whose home follows the Victorian Downtown Abbey style and it is for sale for $899,000. It even has a website castlevictorian.com.

    I love roasted vegetables. I feel like they taste so much better when roasted. I love seasoning them with garlic salt. Yum! 🙂

    Frozen yogurt is the perfect ending to a dinner!

    The weird food thing hasn’t gone away with my pregnancy (i’ll be 28 weeks tomorrow). I am not at a point where I can’t make a decision on what to eat, nothing seems tasty. My breakfast is the same every AM so there is no question there. But when it comes to dinner, if I don’t cook it at home, eating out is a challenge because nothing seems appetizing.
    As for LOST – I wish I could tell you to stop now, but I know it can’t be done. Like you, I watched after the show ended, and lost several nights because of it. This final season gets so strange and the ending, well, I am sure you heard how many people were disappointed. I can’t wait until you are done to hear how you feel about it!

    Have you watched Friday Night Lights before? My husband and I are watching it on Netflix, and I’m convinced it’s one of the best shows on television, like, ever! And you definitely don’t have to be a football fan to enjoy it. I totally know the feeling, sort of like mourning, when you finish a good book or show; you miss the characters and just wish the story could go on. I’d say start a new one! I’m only on the second season and I’m already dreading the day when I watch that last episode!!

      I was going to mention Friday Night Lights also!! My husband (and kids) and I are all addicted. It’s a totally different type of series than LOST, but you may be in the mood for a change. Highly recommend!! Great character development.

      Also, you NEED to watch and catch up on past episodes of Modern Family. Funniest show on TV!!

    Try The Game of Thrones!! Its an HBO series that we are netflixing right now. Oh the intrigue!!! Its got is all. The book is fabulous too. Speaking of books you might like the Secret Diary of Charlotte Bronte.If you like Jane Austin-ish books you will love it. Its very different from the Game of Thrones but I like to mix it up 🙂

    Have you guys watched The Wire? LOST is a tough act to follow, but I highly recommend the Wire. It’s a bit violent at times but is one of the best series ever (IMHO). The writing is amazing and the show is historically accurate in a lot of ways. Also, GAME OF THRONES is amazing! Can’t wait until it comes back on!

    My baby requested sour patch kids until a few weeks into the second trimester! I never ate them before the pg and now (24 wks) don’t desire them at all anymore, but for some reason, I could not go to the store without craving sour patch kids for weeks on end! Sour gummy life savers and also sour jelly beans worked a few times.
